Chicago Cooking Class with Jane Casey (mother who recovered her boys from autism)

Jane Casey is a a foodie, author, speaker and mother of 11 year old  twin boys’ who light up her life.  However, there was a time when  their days weren’t so bright – when her kids were diagnosed with  Autism.  The diagnosis given to them at 2.5 years old has now been reversed.  She believes Autism is a term that describes a variety of treatable symptoms – not a life-long road of managed misery.  Her boys recovered thanks to a treatment of nutrient dense foods, homeopathy, biomedical therapy and a positive attitude.

Her latest quest has been to cook with pure, wholesome ingredients – the way her grandmother used to cook.  These are recipes made from scratch with homemade chicken broth, fresh, seasonal fruits and veggies and lacto-fermented foods (such as kefir and raw sauerkraut).

Jan. 25, 2010 — A low-carbohydrate diet may have health benefits that go beyond weight loss.

A new study shows that a low-carbohydrate diet was equally good as the weight loss drug orlistat (the active ingredient in Alli and Xenical) at helping overweight and obese people lose weight, but people who followed the low-carb diet also experienced a healthy drop in their blood pressure levels.

“I expected the weight loss to be considerable with both therapies but we were surprised to see blood pressure improve so much more with the low-carbohydrate diet than with orlistat,” researcher William S. Yancy, Jr., MD, an associate professor of medicine at Duke University Medical Center, says in a news release. “If people have high blood pressure and a weight problem, a low-carbohydrate diet might be a better option than a weight loss medication.”

Researchers say studies have already shown that the two weight loss methods are effective at promoting weight loss, but it’s the first time the health effects of each have been compared head to head.

“It’s important to know you can try a diet instead of medication and get the same weight loss results with fewer costs and potentially fewer side effects,” Yancy says.

Low-Carb Lowers Blood Pressure

In the study, published in the Archives of Internal Medicine, 146 obese or overweight adults were randomly divided into two groups. Many of the participants also had chronic health problems, such as high blood pressure or diabetes.

The first group was advised to follow a low-carbohydrate, ketogenic diet consisting of less than 20 grams of carbohydrates per day, and the second group received the weight loss drug orlistat three times a day, plus counseling in following a low-fat diet (less than 30% of daily calories from fat) at group meetings over 48 weeks.

The results showed weight loss was similar in the two groups. The low-carb diet group lost an average of 9.5% of their body weight and the orlistat group lost an average of 8.5%. Both weight loss methods were also not significantly different at improving cholesterol and glucose levels.

But when researchers looked at changes in blood pressure, they found nearly half of those who followed the low-carbohydrate group had their blood pressure medication decreased or discontinued during the study, compared to only 21% of those in the orlistat group.

Overall, systolic (the top number in a blood pressure reading) dropped an average of 5.9 points among the low-carb diet group, compared with an increase of 1.5 points in the orlistat group.

Researchers say weight loss itself typically produces a healthy reduction in blood pressure, but it appears that a low-carbohydrate diet has an additional blood pressure-lowering effect that merits further study.

Comment- Excuse my sarcasm, but If only information like this was promoted 40 years ago, millions of lives might have been saved. Imagine the incredibly obvious truth, consuming less sugar (carbs) in your diet is healthy and will promote weight loss! It might even be potentially healthier than taking drugs! But of course half-truths always need the eternal caveat…might merit further study…nothing conclusive here! Wow, what a revelation, WebMD really went out on a limb, I’m surprised it even made the website!

Protecting the Community Food Supply

I recently had my fourth child, and friends embarking on parenthood or expanding their families surround me.  A few days ago, I took a home cooked meal to a dear friend who had just given birth to her third baby.  Providing nourishment to families when a new baby arrives is not a new concept; rather it epitomizes the community support that has carried our species forward.  Just as there was no government involvement in this neighbor-to-neighbor transaction, government does not belong in any neighbor-to-neighbor food transaction.  Neighbor-to-neighbor, or direct farmer to consumer, sales are similar in principle to preparing a meal for a friend.  We need no permits, licensing or inspections to take a meal to new parents, and we need none in any direct food sales.  Yet the government forces regulations on such food transactions at the expense of small farmers and the communities that depend on them.  As individuals, we have the inherent right to purchase food from the producer of our choice and they to sell their food to us free of government interference.

Our relationship with food is profound in its intricacy. Food is more than simple nourishment for the body; we celebrate with food, we grieve with food, and we find comfort and exhilaration in food.  Food is an expression of self and an affirmation of community.  With our food choices we define who we are and what we stand for.  And many young parents, including myself, seek this expression of self for their growing families.  I, as a parent, cultivate how my children experience food in order to bring out the best in their present and future wellness.  I want them to associate foods that nourish their bodies with the memories that nourish their souls.

I spent childhood summers eating ripe tomatoes off the vine and peaches from the tree, with juice dripping down my chin.  While many of my peers turn to fast food or cold cokes to sate their summer appetite, I am grateful that my parents cultivated my tastes to appreciate and seek out these seasonal summer blessings.  I aim to inspire such tastes in my children as well.  Unfortunately, among the food choices available to us today, local foods are prohibitively difficult to access compared to other foods because of government overregulation of the food supply.  In Maryland, the Department of Health and Mental Hygiene has prohibited farmers from selling, bartering or trading the fresh milk from their animals.  Demand grows exponentially for fresh milk and the products made from fresh milk, but this regulation is expressly intended to take away individuals’ choice and restrict access to this nutrient dense food.

As the mother of four young children, I guarantee that no one is more vested in my children’s health than I.  I want for them a vibrant well-being that comes from proper nutrition and I want for them safe food that will not bring on acute illness or degenerative disease.  Shopping at the grocery store is like dodging bullets.  With so much news about foods that have led to food-borne illness, I wonder what will be next and will it be the food I take home to feed my children and my friends’ children?  As we have seen from the recent food safety issues that have made headlines, regulations do not make food safe, individual integrity makes food safe. The best guarantor of safe food is not regulations, but direct face-to-face interaction with someone you trust and with whom you will have an ongoing relationship. Yet government regulation of direct farmer-to-neighbor trade makes most such transactions illegal.  Clearly, food safety is not achieved by surrendering our freedoms to choose our own food.

Access to food we trust, whatever that may be, is as basic a right as breathing, or accepting a meal from a friend. As I transitioned my family to local foods, I was thrilled to find that I finally trusted my food.  Once a task, cooking is now a joy and an art in my newfound appreciation for what it takes to cultivate the food.  I seek nourishment I trust and I choose products based on my family’s needs.  These needs are different for everyone.  Placing burdensome regulations on farmer-to-consumer transactions effectively eliminates options for many individuals.  In Maryland it is against regulation for farmers to sell unwashed or uncooled eggs.  This regulation removes that possibility for the growing numbers of consumers who prefer their eggs that fresh.

Regulations are predicated on enforcement. Farms are raided, shut-down, and run into the ground for not complying with regulations that would effectively put them out of business.  It is partially because of this approach towards enforcement that it remains imperative that bureaucracies not have authority over direct trade.  In Maryland recently a local Health Department agent came onto a farmer’s property unannounced, inspected their egg case and found labels where the font was not large enough.  The farm was ordered to cease selling the eggs with those labels on them.  Enforcement of regulations gives one person oversight over farmers and their farms based on subjective observations and personal experiences.  In contrast to illegal drugs, food is controlled at the point of sale.  Unlike with drugs, where the purchase and possession are illegal, people still have the right to buy, posses and consume whatever food they want, but government has destroyed the source by criminalizing farmers who sell their products directly to their community.

Farmers are central to their communities. They are the heroes who have cultivated the land for the nourishment of all.  Hands untied, farmers can thrive by selling their products directly to local community members and, in turn, communities will thrive.  Young people will flock to farmland in droves for their turn to cultivate the land and feed their communities.  As a young parent, I hope to see the day in the near future when I can legally purchase for my family the food I choose from the producer of my choice.

Cod Liver Oil: Setting the Record Straight

On December 23, 2008, Dr. Joseph Mercola, owner of the popular holistic website mercola.com, issued a statement, “Important Cod Liver Oil Update,” in which he rescinded his long-standing recommendation to take cod liver oil. The Weston A. Price Foundation received dozens of inquiries about this statement and it is for this reason that we have devoted much of this issue to the subject of cod liver oil.

Mercola’s official pronouncement is a strange mixture of true statements and illogical sequelae, conflicting reasoning and unexplained omissions. While it is unfortunate that Mercola has joined establishment voices against vitamin A, what concerns us most is not the fact that Dr. Mercola disagrees with us, but that he misrepresents the WAPF message on the importance of vitamin A in the modern diet.

The ABC’s of Health: Let’s Dive into Water!…

In my earlier posts, I’ve been concentrating on setting the stage for making lifestyle decisions to enhance your health and wellbeing. Hopefully by now, you’ve gained some insight into your Attitudes, Beliefs and Commitments that might be keeping you in your present state of health – whether it be ideal, or in need of some ideas…

Today we’re going to focus on WATER. We may live on the “third rock from the Sun,” but in reality it’s a Blue Marble or should we say a “blue marvel.” Over 70% of the Earth’s surface is covered in water, albeit much of it oceans and ice, but nonetheless, we are blessed with an abundance of this vital elixir of life. And thank heavens for that. While we can go weeks without an adequate food supply, we can only last a few days without water.

Here’s a quick breakdown of the water content in our body: it comprises 80% of blood, 73% of the brain, 73% of muscle, and 22% of bone. I don’t know about you, but I’m getting thirsty just thinking about that…Without a sufficient and steady supply of this life-sustaining fluid, many of our major bodily processes would simply shut down.

So, let’s explore the wonderful world of water: what’s its role in keeping us healthy, how much is “enough,” what’s the best kind of water to drink and does blessing our water really make a difference?

What Good is it Anyway?
It’s pretty clear that Oxygen is essential for life. Just hold your breath for a minute or two (if you’re a gifted athlete…) and see what happens. But for some odd reason, we don’t seem to recognize the essential role that water plays in our life moment-to-moment. Truth be known, it’s involved in almost every bodily function. Fundamentally, water has two primary roles in our body: life-sustaining properties and life-giving functions. Here are just a few notable activities of this amazing liquid:

• Converts food into energy
• Key energizer for the brain
• Foreman of the neurotransmitters
• Acts as a giant cooling system to regulate body temperature
• Carries oxygen and nutrients to ALL our cells
• Protects & cushions our vital organs & joints
• Keeps the liver & kidneys functioning effectively
• Helps to metabolize fats
• Detoxifies and removes waste from our bodies
• The basis for ALL our fluid secretions (saliva, lymph, tears, etc.)

Come on, admit it, NOW you’re getting thirsty! There’s simply no end to its value in sustaining life, but also in enhancing our overall health and well-being.

So How Much is Enough?
We’re constantly reminded: drink 6-8 glasses of water a day! But is that based on scientific evidence? Is there any solid basis for that perennial reminder?…

I recently had the pleasure of reading one of the most important books on getting and staying well: Your Body’s Many Cries for Water, by Fereydoon Batmanghelidj, MD. If this book is not in your “health library,” please be sure to add it to your collection! He is a practicing physician in Northern Virginia who presents a compelling rationale and solid evidence for the importance of increasing the ingestion of water in our daily routine. His specific recommendations for “how much” are simple and clear:

• 1 oz. of water for every 2 pounds of body weight, AND
• 1.5 oz. of water for every 1 oz. of liquid with either caffeine or alcohol.

In terms of how to do this during the course of a day, he advises drinking a glass of water an hour before each meal, another glass 2-3 hours after each meal and a final glass just before going to bed. The beauty of this approach is that he simplifies the times when it is best to drink, make sure we get sufficient volumes of water to prevent dehydration, and most importantly, explains why our bodies need this much water.

Now, this may seem like a lot of water (which was my initial reaction when I read this), but the number of degenerative diseases that result from insufficient water are far too long to list here. He makes a convincing argument for role that a lack of water plays in hypertension to high cholesterol to asthma and countless other conditions plaguing our society. All because of a lack of water…

And be careful not to deceive yourself into thinking that because you’re drinking fluids, i.e., fruit juices, coffee, diet soda or similar types of drinks, that you’re getting sufficient amounts of “water.” While I agree that these drinks are liquid, they do not metabolize the same way pure water does. And given the amount of caffeine most of those drinks have, the diuretic effect only adds to the daily hydration needs your body craves, as noted above.

That may not be what you want to hear, but we at Liberation Wellness are dedicated to providing you with the truth on this blog site. And besides, if you’re really seeking to improve your health, there’s nothing more fundamental than a steady supply of good, clean water.

What are the best Sources of Water?

Ideally, we should get our water from a spring that has worked its way from the mountains. Not likely for many of us, and certainly not practical. Just for the record, I’m not a fan of tap water having read one too many articles about studies done of public water supplies across the country. The latest is the “Toxic Water” Series being written by the New York Times. In the latest installment written December 16, 2009, they point out that some 60,000 chemicals are now being used across the country to “treat” our water supply – only 91 are regulated by the federal government!

So that leaves either bottled water or filtered water. I don’t know about you, but I am growing weary of spending upwards of $15/gallon for bottled water. (And we complain about the cost of gasoline!…) And if you go this route, please be sure to use a metal water container that you can easily find at your local camping supply or hardware store. Using a re-useable bottle will do much to ease the burden on our ever expanding recycling centers.

And if you prefer filtering, there are numerous models to choose from, but your best bet is either reverse osmosis or a top of the line carbon filter unit. The former is a considered the best path, but it is a bit more expensive. The latter, is more economical, easily installed and will last 18 months to 2 years. Do your research, but be sure to install some process of “cleansing” your local water supply that added measure.

Preparing your water for optimal benefit

Now, one last step… For those of you who have seen “What the Bleep Do We Know,” or have had the opportunity to read The Hidden Messages in Water, by Masaru Emoto, you’ll understand the vital importance of “blessing” your water before you drink it. Sounds strange, right?

Presented below are just two of the pictures, among hundreds that Dr. Emoto has taken over the last several years to demonstrate the structural impact our thoughts and emotions have on this ubiquitous liquid we know as, water. And when you consider the fact that some 3/4ths of our body is composed of water, please consider the impact your thoughts and emotions are having there, as well. A bit humbling when we stop to consider that dimension of our healthy lifestyle.

It takes but a second, but these photos are striking evidence of the energetic dimension our thoughts and feelings have on our lives, day-to-day.

Got MSG ?? …


Not that I want any !!!! … But here is something kind of interesting that happened yesterday ….

Breakfast was what has become my “normal” – 2 eggs, some cheese, coffee with the oh-so-yummy heavy cream that I got from a farmer’s market the other day …this was at 6:00 am – trained a client, came home, and at about 9:30, a bit more cream mixed with cocoa powder and stevia. Went to a meeting and then met a friend for lunch at 12.

I had “grilled” chicken with salad, sour cream, salsa, and guacamole. I think the chicken was actually pan-seared and had some sort of “dusting of seasoning” on it because it tasted very MSG-ish and I (therefore) ate more than I would have. Well, all afternoon I had a stomach ache and started some serious carb/sugar cravings, which I have not had all week! For the rest of the day, I had some HB eggs, cheese, and yogurt but just constantly felt hungry and wanted to eat … interesting as I have not felt like this all week! … I am blaming the suspected-MSG …. anyone else ever had any experience with that ? I usually get a major headache from MSG, which I did not get this time … hmmm …. curious … but not enought to repeat the meal !

“Liver Flush”

My tip for the day:

This is a lovely little trick I learned many years ago from the daughter of the top ND in the Aspen area. I haven’t truly implemented until about 5 years ago. It’s wonderful for overall health, or if you’re doing a fast, or if you’re fighting off the terrible effects of a toxic medical therapy like chemo.

Buy some organic, pure aloe vera juice. Trader Joes has a great deal for $7.99 a gallon. Get some Emergen-C at the same store if you can (least expensive), which is 1000g C with electolytes and some versions have other supplements too. First thing in the morning, before ingesting anything, mix 4 oz of the juice with 8 oz water and one packet of Emergen-C. Wait at least 1/2 hour before eating anything. Taking the C in this form goes more quickly and directly into your system than pills. For about $8 you get 25-30 drinks of 1g C.
Repeat at night if detoxing.  I do it now for daily maintenance. Fantastic for digestive health as well! Enjoy!

More Liberation, more fun !

So, here we are … technically, day 4 of The Liberation Diet – check it out at http://liberationwellnessblog.com and you will SEE ME THERE woohoo!! – thanks Kevin !!!

Thursday …. and I am still feeling great – so, maybe you think I sound surprised ??!! WEll, I am a little b/c I have plenty of energy and in the past, I have always had a slow start with low-carb stuff … hmmm … here, no fruit at all for the past couple days – my only carbs are coming from dairy and a few nuts … and some red wine … BUT … no headaches, no “yucky” low-carb BLAH feeling ….

I AM eating more fat and less protein than I have in the past efforts with WAP / Primal /Atkins / etc ….. Here’s what I had today

1) 2 eggs – scrambled in butter / coffee with half-n-half (organic) and cheese

2) goat-cheese fudge .. if that disturbs you, I am sorry ! … but it was
yum-o … “recipe” (if you want to call it that) can be found at the Forum of the Liberation Diet ….

3) beef broth with little bits of meat and a few cherry tomatoes; dark chocolate with chilis and nibs … mmmm !

4) greek yogrut – could only find 2% so I added sour cream (it was only cream) …. yum again

5) beef stew for dinner …. salad greens ????

that’s about it – oh, slow cardio – treadmill and bike — yawn !
And I went to the doc today for thyroid blood work and all sorts of other stuff – I will post relevant bits of that when it comes back …
