Pizza- Liberated!!!!

Pizza is a HUGE favorite food for my husband. What’s NOT a favorite, is the reaction he has after eating it. Increased inflammation, increased “seasonal allergies” and often flu like symptoms. This pizza was our answer to that dilemma

 

 

 

Crust :

3 cups of cooked cauliflower – about 1 head

3 cups grated mozzarella cheese

5 eggs

5 Tbs coconut flour

Italian season

Grate cauliflower and saute in a dry pan. Once cooked, set aside and cool. Combine cooled cauliflower with cheese, eggs, and coconut flour, and any seasoning.

Place wax paper on a stoneware cookie sheet, and spread out to form crust. Bake in the oven @ 450 degrees for 15-20 minutes, until lightly browned.

Top pizza as desired, and place under a broiler to melt cheese. . Since the pizza will only be under the broiler for about 5 minutes, slice veggies super thin, or par cook them before topping the pizza.

Texas Chili

I love a good chili. For the record- real chili- has NO beans. This is my chili. It’s a favorite around here. It has a very rich deep flavor, lots of spice, but not too much heat. Enjoy with plenty of sour cream and cheese! Like all chili’s – this one really taste best the day after it’s made. We cook it up a day before we plan on eating it, then I only have to reheat.

 3 whole dried chipotle peppers

3 pounds chuck roast, 1 in cube

½ pound bacon

2 celery stalks- diced

3 carrots- diced

1 red onion – diced

1 yellow onion – diced

2 bell peppers- diced

4-6 medium jalapeno peppers- diced

20 cloves garlic- pressed

½ tsp cinnamon

½ tsp cloves

½ tsp allspice

1 tsp coriander

½ tsp cayenne

1 Tbs cumin

1 tsp ground ancho

1 tsp ground new mexico chili

1 28 oz can whole tomatoes

3 cups chicken bone broth

1 cup brewed strong coffee

2 Tbs kosher salt (or to taste)

1 pint beer

2 Tbs cocoa powder

½ cup masa harina (optional)

Suggested garnishes: cheese, sour cream, avocado, diced onions, diced jalapenos, cilantro

 

 On a dry cast iron skillet heat dried chipotle chili peppers. Remove from pan and add to almost boiling water (about 2 cups). Set aside

Render bacon, crumble and set the cooked bacon pieces aside. Brown the roast cubes, adding tallow or ghee to the bacon fat if more is needed. The roast will probably need to be browned in batches. Don’t over crowd the pan or you will “steam” rather than brown your meat. Set aside browned meat.

Adding tallow or ghee as needed, sauté the onions until translucent, about 10 minutes. Add carrots and peppers and celery, sauté 10 min. Add garlic, cooking just until fragrant. Add dried spices and sauté for a moment to release fragrance.

Take the soaked, dried chiles and puree in a blender with the soaking liquid. Add to the chili. Add tomatoes, smashing them well, to the pan. Add remaining ingredients except cocoa powder and masa harina. Add cubed beef and bacon crumbles to the pan. Simmer very low for 3-5 hours until meat is tender.

Once meat is tender, add cocoa powder and masa harina (if desired- it thickens the chili). Simmer on low for another hour. Garnish and enjoy!!!!

Breakfast smoothie

Smoothies are such a great, quick breakfast. My kids love them. At one point in the video, my daughter (2 years old) realized what I was doing. You’ll all the sudden hear her saying “shake, shake, shake” over and over (what you can’t see is her bouncing around in excitement….my own little tigger)

We use approximately these amounts per serving:

2 whole eggs

1-2 Tbs coconut oil

1-2 cups liquid- raw milk, coconut milk, kefir, yogurt, and cream are all awesome options

1 pinch of salt

1/2 tsp -1 tsp vanilla (not imitation)

ice or frozen fruit

The coconut oil is important because it give you great sustained energy, keeps you feeling full longer, and is full of lauric acid. We don’t use any frozen fruit in our shakes- choosing instead to let the natural sweetness come through. If you are used to your smoothies tasting like melted ice cream…… start reducing the fruit as soon as possible. Also- increase the amount of lacto-fermented foods in your diet. This will help reduce your sweet tooth. Remember- taste is a LEARNED response. Exposure is the key to adjusting your taste buds.

Cooking with Grass Fed Meat

There are both culinary and nutritional advantages to cooking with grass fed meats. Conventional meat , in comparison, is bland and boring; while grass fed meats boast a rich meaty flavor. Due to the leaness of pasture based (another term for grass fed) animals it is easy to overcook the meat. It is not uncommon to hear inexperienced, or uneducated chefs refer to grass fed meats as tough and dry. Although the breed and enviroment of the animal can have an impact on the final product- cooking techniques have an even greater impact. Below are some helpful guidelines to use when cooking your pastured meat.

Cooking methods fall into mainly 2 different catagories: dry heat cooking, and moist heat cooking. Dry heat cooking includes techniques such as; broiling, grilling, stir-fry, sautee, and dry roasting. Moist heats use the addition of liquid to assist cooking. Poaching, steaming, braising, and simmering in a liquid are all be forms of moist heat cooking. To make the adjustment from cooking conventionally raised animals, to grass fed meats; you must first determine the cooking method you will be using.

MOIST HEAT COOKING

Moist heat cooking is very forgiving. Rather than cooking to a specific temperature (ie: medium rare), your goal is to break down the connective tissues and fat; which creates a tender moist cut of meat. Moist heat works especially well for less expensive cuts of meat. It turns tough muscle into a fork tender, very rich in flavor, delight. Here are some keys for cooking grass fed meat using a moist heat cooking method.

  • Never use a microwave

Using a microwave to thaw grass fed meats will cause a change in flavor, and a tough final product. It is very lean, and you don’t want to force any moisture out of the meat. If you need to thaw it quicker than normal, place in ziplock or vacume sealed bag, and then into a bowl of cool water. Replace the water every 30 minutes or so.

  • Lower the temperature by 50 degrees

Grass fed meats should cook slower than conventional meats. Again, it’s very lean and the goal is to melt the connective tissues gently. When cooked too high and fast the proteins in the meat will tighten and squeeze all the moisture out, like wringing out a sponge. Even though you have reduced the temperature- the cooking time will be pretty close to the same.

  • Always preheat your oven

 

  • Bring meat to room temperature before cooking it

 

  • Sear your meat before braising it

Searing your meat develops color and flavor. It also helps “lock in” juices. Mostly- it’s about the flavor though. Take the time to sear properly and you will be rewarded with a rich meaty flavor.

  • Don’t pierce with a fork, use tongs

When moving the meat around, please don’t pierce it. That’s just going to cause the juices to escape, and retaining moisture is the name of the game!

  • Let rest 8-10 minutes

When meat is hot and you cut it, the juices run everwhere and you are left with a dried out piece of meat. Allow it to rest for 8-10 minutes under some foil, and your meat will retain the juices, and the flavor!

DRY HEAT COOKING

Dry heat cooking is a little more tricky, but with a little understanding and a little attention- you’ll never want to go back to conventional meats. Grass fed meats are much leaner than conventional meats (yes- I know I’m repeating the same message….it’s an important one to understand). Cooking times and techniques should be adjusted so you don’t force all the fat and moisture out of the meat. Grass fed meats cooked using a dry heat method should not be cooked to temperatures above 140 degrees. Here are some things to keep in mind when using a dry heat cooking method on grass fed meat.

  • Don’t use a microwave to thaw grass fed meats

See above

  • New temperature guidelines

Here are the correct temperatures for grass fed meat:

Rare – 120

Medium Rare- 125

Medium – 130

Medium Well 135

Well Done – 140

The risk from food borne illness is much lower in grass fed meats. This is because you start with a healthy cow, that package of ground beef in your hand is from 1 cow, not comprised of 100 different cows, and the meat is much fresher! It has not been sitting thawed in a meat case waiting for someone to buy it.

  • 30-50% faster cooking times!

Due to the lean nature of grass fed meats, it cooks quick! Until you are comfortable cooking grass fed meats, you will want to keep a close eye on it. Remember to reduce cooking times by 30-50 %

  • Bring meat to room temperature before cooking

Your meat will cook more evenly, and predictibally if you start it from room temperature- rather than straight from the fridge. Never try to cook frozen grass fed meats. It’s a recipe for tough meat.

  • Use tongs, don’t pierce the meat

 

  • Sear first for additional flavor

 

  • Use a thermometer!

Until you are really comfortable with the new cooking times and temperatures, you will really want to use a thermometer. Your beautiful steak or burgers can go from perfect to shoe leather in less than 1 minute. You don’t want to experience that heartache!

  • Allow the meat to rest for 6-10 minutes

Update!!!! (measurements)

I always love reading weight loss stories. Part of what I love about the liberation diet is that the weight loss is sustainable. Unlike a crash diet- where you regain it all (and then some)- lose the liberation way- and it stays lost! Whenever I read “so and so lost X amount of pounds” I tend to wonder what that actually means in real life. Meaning, what size are they able to wear now- how did their measurements change? If you are like that too, then this update is for you!

Sausage and cabbage “hash”

I love cooking dinner, but sometimes my day gets away from me. Next thing I know- dinner time is upon me- what to make??? This is a favorite “go to” for us! Try it once- you’ll be hooked!

Ingredients: (serves 4)

1 pound grass-fed sausage

1 small onion diced

1 large head of napa cabbage

8-12 tablespoons butter

salt and pepper

1-2 cups bone broth

Saute onions in 1-2 tablespoons butter. Add sausage and another 1-2 Tbs butter. Cook until no longer pink. Add thinly sliced cabbage  remaining butter. Cook cabbage until very tender. Add broth and reduce until saucy. Season to taste.

Although wonderful on it’s own- it’s also great with a hot pepper mash on the top.

Is the Hallelujah Diet Biblical?

As a believer, I greatly value the Word of God. I do not take lightly the commands, and guidance found in those pages. When someone says “this is the way” or “this is what the Bible teaches” then we should examine that closely and test it to see if it’s true. Unfortunately far too many people just accept the word of another person without any critical thinking. The Hallelujah diet claims to be the biblically mandated way of eating. I would like to make note here: they do not claim it is “a way of eating” but rather the “only” God approved way of eating. After spending time researching this diet, I was left disappointed with what I found. I found alot of half-truths, plenty of faulty logical thinking, confusion of correlation and causality, and even a blatant disregard for scriptural teachings! If you are going to claim that your painting is an authentic Monet, than it better hold up to scrutiny. In the same way if you are claiming that your diet, is the one and only “God approved” way of eating- based on the bible- then it should pass any test with flying colors!

The hallelujah diet (THD) has  a packet they put out called biblical nutrition 101. They break down different food choices into chapters. So lets take a look at a few of those:

Vegetables and Fruit

THD states that God created fruits and vegetables for us. They claim we are supposed to eat ONLY live fruits and veggies for nutrition. This philosophy is based on Genesis 1:29. I don’t disagree that in the Garden of Eden we ate a vegetarian diet. Every other animal on the face of the earth also ate a vegetarian diet (Genesis 1:30). If you look around the animal kingdom now- you can easily see that is no longer true! Now plant’s bite back! There are anti-nutrient properties in vegetation, grains and beans. Some of these can be neutralized by cooking the food. Even the THD diet recognizes that you can’t get the nutrients you need from the whole food.

The THD diet acknowledges that at least 65% of the nutrients found in vegetables and fruits are lost through the digestion of them in their whole raw state. They explain that dependant on the health of your gut, you could be absorbing as little as 1% of the nutrients. Their answer? Juicing! Don’t you remember the story about Adam having to take the juicer in to be repaired cause Eve shoved to many apples down it at once?. Yeah- I don’t either. So we are supposed to believe that God, in His ultimate wisdom and power- created the earth from nothing: but didn’t think to create a digestive system that could pull more than 35% of the nutrients out of the only food they were allowed to eat? Nor did He have the forethought to give them a solution (like a juicer)?

What about if you don’t have a juicer? Well THD has an answer for that! They sell several dried juice supplements. So basically- to eat the way God (supposedly) wants you to, you have to eat the food He created- PLUS buy the tools man made, PLUS buy the food THD made. This is sounding less and less like a biblical diet now, and more and more like a man-made adaption. The point of the juicer, according to the THD, is to preserve the live enzymes, while eliminating the fiber. Too much fiber is not healthy for your system (a point on which we agree!). While live enzymes in your diet are a wonderful goal; a better source of live enzymes would be lacto fermented foods. Now those foods are superfoods!

THD says you need a juicer now, but not in the Garden of Eden, because man was healthier, and the world was better, and everything was organic. Hmmm, so before, when God commanded this lifestyle of eating, there were different circumstances. But now, circumstances have changed, so we need to add a bunch of stuff to make it work? Isn’t that possibly the reason why our the diet was commanded to change after the flood?

THD uses alot of circular reasoning, and poor logic to back up their all vegan, mostly raw diet. One example of this is found in their observation of nature. They use the deer’s vegetarian diet, and lack of weight issues as proof positive that we should also be vegetarian. Problem is, you could easily use that same reasoning to look at the cow- after all they eat a vegetarian diet just like the deer. Anyone reading this have goals of looking like a cow? Or how about a tiger? Sleek and strong, fast, cunning- and…….. a meat eater! If only it were as easy as picking an animal whose beauty we appreciate, and then imitating that diet!

Meat

THD claims that animal products are the number one cause of all human health issues. This section of their information packet is full of errors. They claim that one of the biggest reason meat is an issue is because it lacks fiber. Wait! Earlier- fiber was evil- and needed to be removed from our vegetables- now a lack of it is the reason meat is bad????  THD presents  complete misinformation, blaming heart attacks on cholesterol, and fat- saying it clogs arteries. They claim that protein is fuel for cancer (while not saying anything about sugar feeding cancer). In actuality: The National Cancer Institute states that: “Eating too little protein and calories is the most common nutrition problem facing many cancer patients.” THD uses “the china study” as the basis for many of their claims. This study has HUGE errors in it, and has been debunked many times. They also continue to spread lies by claiming that Dr. Atkins died of a heart attack. He did not. He slipped on ice, and hit his head. The resulting head trauma lead to other complications, and ultimately his death. As if added as an afterthought, THD adds a single statement at the end of this section claiming that pastured meats are the same as industrial meats. This is a complete lie. Just like what we eat impacts our health- the diet of animals impacts their health. A steer raised on grass (which is its normal diet) is much healthier, and had more nutrients, in comparison to a steer finished on grains in an industrial feedlot. We get the nutritional benefit of those animals spending a lifetime eating the living greenery of the earth. That’s why pastured meat vs feedlot meat is so important.

Personally I have issue anytime someone uses one scripture to back up a point, at the exclusion of all other passages. THD uses the genesis model of eating, and ignores all other parts of the bible. Genesis 9:3 says “Every moving thing that lives shall be food for you. I have given you all things, even as the green herbs.” So it is clear that we are now to look at meat as being equal to previously allowed foods- ”even as the green herbs”. In Genesis 18:8, the Lord comes down and visits with Abraham. During that visit it is recorded that God Himself- ate butter, meat, and raw milk. God was the one who controlled what was written in His Word. So we know that since it’s in there, He wanted us to see that He gave His stamp of approval to these food sources. He commanded His priest to eat meat on at least 7 different occasions in the old testament. We can also see in the new testament a similar approach to food. It is recorded that Jesus himself, ate fish and lamb, and on many occasions fed others meat, encouraged the catching of fish for food, and even cooked it. Does it even make sense to claim that God wants us to only eat vegetables when He himself ate and encouraged the eating of meat?

Grains and Sugars and Salt

I appreciated this quote by THD  “This (eating refined grains) leads to overeating! Sadly, this has produced a nation  of overfed, undernourished, predominantly overweight people! (Note: Remember, farmers use grain to increase the weight of their animals.)” I applaud THD’s desire to get away from the Standard American Diet. Full of refined processed chemicals and junk- no one could find health eating that way. It is unfortunate that they have taken the approach of throwing the baby out with the bath water. An interesting side note- they discourage the use of anything cooked in the beginning, saying that the food needs to be able to still grow before we put it in our mouths, and then allow cooked vegan dishes at the end. They also encourage only the simplest of cooked grains- but then list recipes for bread on their website.

Conclusion:

THD confuses correlation with causation. Health is relative. Compared to the individual dying of cancer, the person with a horrible case of the flu is healthier. The Standard American Diet (SAD) is a recipe for illness. Making any changes, away from processed food, will result in improved health- but not necessarily optimal health. They site stories of improved health, such as getting off medicines, and no longer needing insulin. THD claims this is from not eating meat, and following THD. In reality it is because they are no longer eating SAD! It’s not meat and saturated fats that are the problem, it’s the processed foods, chemicals, fake foods, and hydrogenated fats! Removing those from the diet will improve health, but only to an extent. You can’t just remove bad foods- you have to add healing nutrients back in. THD says “ when we place these highly concentrated, high quality, incredibly dense nutrients into our body, the body has the building materials needed to produce a cell that is superior to the one it is replacing, as our bodies’ cells die and replace at the rate of approximately 300 million per minute.” It’s a shame they have been fooled into thinking that vegetables and fruits can offer the same dense nutrients as grassfed meats and fats!

THD “looks good” in light of our obsession with vegetarian eating. Somehow eating meat has become a sign of a lower level in terms of both mental and spiritual development. Our world has equated vegetarian, and vegan eating with being a better person and on a higher plane.  A vegetarian is no more righteous than one who chooses to eat meat. Romans 14:2 says “One person has faith that he may eat all things, but he who is weak eats vegetables only”. They claim that Daniel was proof of the superiority of eating vegetables. Did they read the same story I did? Daniel eating only vegetables and drinking only water, and then ending up healthy was……a MIRACLE! In fact the commander was fearful for his life, that if Daniel did as he planned, he would look sickly at the end. Daniel and the commander both understood the need for meat and fat as part of the diet.

THD closes with this:

My friend reading these closing words, we are living in a world that has many voices crying out to us saying, “This is the way!” But the Bible says in I John 4:1,“Beloved, believe not every spirit, but try the spirits whether they are of God: because many false prophets are gone out into the world.”

I agree. Let us “try the spirits (THD), whether they are of God”, using the only appropriate standard: the Word of God. 1 Timothy 4:1-3 says “ Now the Spirit speaketh expressly, that in the latter times some shall depart from the faith, giving heed to seducing spirits, and doctrines of devils; Speaking lies in hypocrisy; having their conscience seared with a hot iron; Forbidding to marry, [and commanding] to abstain from meats, which God hath created to be received with thanksgiving of them which believe and know the truth. For every creature of God [is] good, and nothing to be refused, if it be received with thanksgiving: For it is sanctified by the word of God and prayer.” (emphasis mine)

THD claims to be pulling the diet straight from the bible- yet skips over tons of passages, and adds cooked food. If eating the garden of Eden way was all that was necessary, then why add a cooked dinner? It is NOT a biblically accurate diet. It is one man’s opinion about food that cannot be defended by using either science or the Bible as it’s foundation!

Thanksgiving update!

Starting weight- August 2010

I’m so excited. I’m overwhelmed. Mostly, I’m incredibly thankful.

I’m excited to be able to announce that I’ve lost 40 pounds! Honestly, this has me feeling a bit overwhelmed. In secret, I had given up on losing the weight. I was unhappy with how I look, unhappy with how I felt, and unhappy with my energy levels. I’m  so thankful to Kevin and the Liberation Wellness plan!

I will be turning 30 this year. Well, in about 2 weeks to be exact. I set a goal, back in January, to weigh below 200 pounds before I turned 30. When July came and went, with no change in my weight- I pretty much gave up on that goal. Then I found the Liberation Diet in August. Now, today, I am 3 pounds away from my goal. It feels wonderful to no longer be helpless to change! This is the first time in years that I’m actually feeling excited about my birthday! I am starting to like the way I look again. Who knew stepping on the scale could be so fun? I practically do a happy dance every morning when I step on the scale! Ok- so I don’t dance ON the scale…..that would not be good for the scale, but you know what I mean.

Just put the fork down!

Just put the fork down! Don’t eat so much! Exercise and stop sitting around! Stay out of the potato chips!!! Your weight is a choice!

 

Those are the kind of statements one reads online when looking for suggestions on losing weight. I know, I’ve spent HOURS looking for something, anything, that could lead to a healthy me. The image that the media has painted is that if you are overweight, you fall into one of two categories– Either you are happy being an overweight out of shape person who values bags of potato chips above all, or you are an unhappy, but very lazy overeating slob. Granted there is the occasional painfully patronizing doctor or “expert” telling you it’s not your fault, but it turns out they are just trying to sell you something.

 

I’ve been that person, struggling to be fit and healthy against all hope. Desiring to actually like what I saw in the mirror. Unfortunately it seemed so far away, out of grasp…..hopeless. I examined/tried many different diets. It seemed like my choices boiled down to being crazy “unhealthy” (ever heard of the grapefruit diet?), or trying low calorie…….yet again!

So January of this year, I decided to listen to the government (cause after all they want me healthy and fit right?), and follow a strict low calorie, high intensity workout regimen.  I began…. I weighted, measured and tracked every molecule of food that went into my mouth. Three times a week I had an intensive hour long training session with a personal trainer (who modified and influenced my diet plan). On my off days, I walked, walked, and walked some more. I was even doing squats while folding laundry and feeding my little one. I was determined to make it work. I was sore, tired, hungry, and cranky (oh was I ever cranky!) After 2.5 months, I was broken and battered, and had lost only a few pounds. I was forced to stop because my body revolted and an old illness flared up. In the next 2 weeks I gained back every ounce I had lost- and then some. I was defeated.

I discovered the real food movement shortly after that, gobbled up all the learning I could. Slowly I started getting stronger, my illness started to subside, and I got more energy. But my weight didn’t budge. Then all the broken and scatter pieces, finally began to come together when I discovered the Liberation Diet. Desperate does not even begin to describe what I felt when I first picked up the book.

I signed up for a round of nutritional counseling with Kevin Brown. Between him, and the Liberation Diet book, I began to understand my body. For the first time ever I had hope. I started understanding the lies that the food industry was pushing. I began to appreciate food for the vast array of flavors and textures. The foodie in me came alive again. Suddenly meals involved ingredients such as butter, eggs, salmon, steaks, cream, and did I mention – BUTTER! I vividly remember looking at my husband during the first week of the liberation diet and saying “oh my goodness! I sure hope this works! I could eat like this forever!” Thankfully my wishes came true. I started losing weight. The first 10 pounds, I didn’t say anything to anyone else. I had in the past, been able to lose that first ten pounds, but never more than, and never kept it off. I learned not to eat at 10pm anymore, and to appreciate food for the nutrition it was putting in my body. I learned to stop flushing all that nutrition right out of my body by drinking insane copious amounts of water. Then more came off, and continued too. Stepping on the scale actually became an exciting act- rather than a dreaded emotional burden. In 2.5  months I’ve lost 30 pounds, and my husband has lost 25.

There are days I look in the mirror, and just feel like I’m in a dream. I still have quite a bit more weight to lose (another 45-55 pounds), but for the first time EVER, I believe I can reach my goal.  What is equally exciting, is how I feel. I have so much more energy these days. I work out not because I must, but because I enjoy it, and have the energy! When you have extra energy you move more, without even realizing it. While shopping the other day, I found myself actually running the cart to the cart holder. In the past I would never have moved faster than a slow pace. In all honesty I probably would have tried to get my hubby to walk it back- while I sat in the car and waited. Having energy, slimming down, and eating good food, turns out these are not things that are just a pipe dream. They don’t require white knuckled will power and the struggle of a lifetime. What they do require is to be able to push past all the lies and misdirection being spewed from the mouths of those pocketing from our illness. The Liberation Diet is  the knife that cut through to the truth of how the body works, and how to make it healthy.
