Do Sarah Palin’s E-mails Reveal She’s A Closet Low-Carber?

One of the most polarizing figures in modern-day American politics has got to be the former governor of Alaska and the 2008 Republican vice-presidential nominee Sarah Palin. Just the sound of her name evokes a wide variety of reaction from people like nobody else out there. People generally either really love her or they really hate her–there is hardly ever anyone in between these two extremes about her. Regardless of which side of the political spectrum you fall on and what you may personally think about Sarah Palin, there’s no denying she is a major figure in politics and probably looks like a contender for the GOP nomination for president in the 2012 elections. She’s got name recognition after being thrust onto the scene three years ago and many people look up to her as a leader. Even the staunchest Palin critics would agree she wields great influence over at least a certain segment of the population.

You might be wondering why the heck I’m even talking about Sarah Palin on a blog dedicated to the subject of nutrition, health and low-carbohydrate living. Well, there’s a perfectly good explanation for it that I’ll get to in a moment. But lest I’m somehow misunderstood or misconstrued, let me be extremely clear: I am by no means endorsing or asking people to support Sarah Palin in any way. As I’ve already stated, most people already have an opinion about the woman that will determine whether you would or could ever support her if she does end up running for President of the United States. And this issue I’m about to talk about is relevant if somehow we end up with a President Palin someday (okay, about half of your just fainted, but stick with me on this).

Honestly, this really has little to do with Sarah Palin as much as it does someone in her position of power. And that’s the crux of this news I have to share with you today that should be the take away message. You see, there have been some rather interesting revelations come out in the past few days from the release of nearly 25,000 e-mails while Palin was the Alaskan governor. Most of the information contained therein was about her gubernatorial duties, party politics, and whatnot. But hidden among all those folksy responses was an interesting exchange she had with her residence manager named Erika Fagerstron on July 29, 2008 about her dietary habits revealed in this ABC News story:

Fagerstron told the governor she was heading to the store to buy “a couple of things for the house.”

“Do you need anything?” Fagerstron asked, noting “I have formula and mocha stuff on my list.”

Palin’s response “Small bottles of champagne, low carb foods. Thanks!”

Erika replied, “Sorry, but Im not sure what kind of low carb stuff to buy.”

“It’s cool,” Palin wrote back. “I’ll get to the store at some point here for that. Mainly, just dont want the kids to have too much sugar/white carb stuff.”

WHOA! Did you see that? At the time that was written, Palin was a sitting governor and close to being selected as John McCain’s running mate on the GOP ticket. While it doesn’t appear she necessarily used her position of power to influence public policy regarding nutrition while in office, she obviously believes in the value of low-carb diets especially with her children. It makes you wonder how many other governors, U.S. Senators, U.S. Congressmen, and even presidents are closet low-carbers. And if they, like Palin, believe this way of eating is healthy for their families, then why wouldn’t they want to promote it to their constituents as well?

All it takes is one look at the recently-released “Food Plate” from the USDA to see why the promotion of a healthy low-carb lifestyle to the masses is so sorely needed:

In the recent survey of my readers in April 2011, one of the questions I asked was what it would take to make high-fat, low-carb nutrition more mainstream. One answer that received a lot of votes was “a famous person starts promoting it.” In fact, some people responded more specifically with “when the President of the United States starts promoting it.” And that’s why Palin, President Barack Obama, former Massachusetts Governor Mitt Romney, former Minnesota Governor Tim Pawlenty and all the other contenders for POTUS are a possible missing element in seeing major changes happen at the USDA before they come up with the 2015 Dietary Guidelines.

Whoever is President of the United States after the 2012 election will be choosing who will serve on the 2015 Dietary Guidelines Advisory Committee. The current leaders at the USDA say “the evidence is just not there” about low-carb diets despite overwhelming genuine science that IS there which Consumer Reports reported on in their June 2011 issue. The fact is the low-carb research was ignored in the 2010 Dietary Guidelines and it’s not surprising–not one single low-carb researcher was asked to serve on the Committee. But what if we had a President who believed strongly in the message of livin’ la vida low-carb like Sarah Palin expressed in these e-mails? Would it make a difference?

Again, please don’t make the mistake of thinking I’m promoting Sarah Palin for President of the United States. I am not. But she serves as a good example of the kind of thinking we’d like for our political leaders in positions of power to have to get past the stigma about low-carb diets being a dangerous fad that still exists despite the fact that respected Harvard School of Public Health leaders are now publicly bemoaning low-fat diets. The tide is indeed turning in favor of healthy saturated fats and a significant reduction in carbohydrate intake from the Standard American Diet. Will a pro low-carb president who isn’t afraid to take on the special interests in the food and pharmaceutical industries help to push low-carb living into the mainstream? In the style of Palin, all I can say is “you betcha!”

Consumer Reports Admits The Scientific Evidence Says ‘It’s OK To Go Low-Carb’

I don’t know if you’ve noticed it yet or not, but there appears to be a major paradigm shift in reporting happening regarding low-carb diets in some of the most prestigious media publications over the past few years. We’ve seen it in the Los Angeles Times, New York Times, The Huffington Post, UK Daily Mail, and People, for example, and the trend is a positive one for the high-fat, low-carb cause. However, over that same time period there has been one media outlet in particular that has been especially critical of an Atkins-styled low-carb diet plan–I’m referring to Consumer Reports.

I first reported in May 2005 shortly after starting this blog about how the benefits of livin’ la vida low-carb were severely skewed by Consumer Reports because they said it was a great “short-term weight loss” program but failed to help participants retain their weight loss. They even said it provided poor nutrition for allowing too much fat and saturated fat, too few fruits, too little fiber and that it “might have a negative effect on some dieters’ health.” Just two years later, they were back at it again when I blogged about it in 2007 when Consumer Reports again treated the Atkins diet unfairly because they were basing their opinions about it completely on the current Dietary Guidelines at the time that eschewed fat, especially saturated fat, and embraced whole grains and starchy carbs. So of course the Atkins diet isn’t gonna look good through the lens of a severely skewed and outdated nutritional analysis.

Flash forward to 2011 and it seems that even Consumer Reports is singing a different tune. While they still rank plenty of other diets like Jenny Craig, Slim-Fast, Weight Watchers and Zone ahead of the Atkins diet (see the full three-page published article in the June 2011 issue of Consumer Reports here, here and here), the low-carb diet actually got a special mention in the post-commentary that seemed rather odd given its unenthusiastic rating. They even went so far as to proclaim in the heading of this section that “It’s OK to go low-carb.” Well, thanks for your permission. Check it out for yourself:

Most striking to me was the fact they admit that while the Atkins diet performed poorly when using the 2010 Dietary Guidelines for Americans as the basis for coming up with the ratings, there’s actually “more to the story” because of the “evidence (that) is accumulating that refined carbohydrates promoted weight gain and type 2 diabetes through their effects on blood sugar and insulin.” Well HALLELUJAH! They quoted Duke low-carb researcher and practitioner Dr. Eric Westman who explains why controlling carbohydrates is so essential to weight and health management.

I was so pleased to read Consumer Reports acknowledging the research of people like Dr. Ronald Krauss who found in 2010 that saturated fat is probably not the enemy we’ve been led to believe it is. They wrote “it’s clear that fat is not the all-around villain we’ve been taught it is” and that the unintended consequences of making people fat-phobic is the fact they are now eating more carbohydrates like white bread and potatoes instead. Harvard nutrition researcher Dr. Frank Hu also chimed in on this subject stating that “refined carbohydrates are likely to cause even greater metabolic damage than saturated fat.” AMAZING! The best part of the reporting by Consumer Reports on the low-carb diet is their acknowledgment that “clinical studies have found that an Atkins or Atkins-like diet not only doesn’t increase heart-disease risk factors but also actually reduces them as much as or more than low-fat, higher-carb diets that produce equivalent weight loss.” YES YES YES!!!

Finally, we’re seeing some mainstream media beginning to trickle the message out there. No, it’s not gonna change people’s thinking overnight because they’ve been brainwashed for so many years about how fat is clogging their arteries (insane, but widely believed to be true) and how healthy and wholesome carbohydrates are in the diet (when there is absolutely ZERO dietary need for carbohydrate in the diet). But with reporting like this from Consumer Reports and elsewhere, you can see the old guard is beginning to fall and the new wave of evidence-based nutrition based on the very latest scientific advancements in metabolic health are bursting through into the culture. I’ll keep reporting on any news sources that promote the high-fat, low-carb message and I have sneaky suspicion it’s gonna become more and more prevalent in the next few years leading up to the 2015 Dietary Guidelines. Something tells me that version of the Food Pyramid is gonna take a drastic turn for the better. Call me overly optimistic, but I can see it coming. Are you ready for it?

Feds Sting Amish Farmer

A yearlong sting operation, including aliases, a 5 a.m. surprise inspection and surreptitious purchases from an Amish farm in Pennsylvania, culminated in the federal government announcing this week that it has gone to court to stop Rainbow Acres Farm from selling its contraband to willing customers in the Washington area.

The product in question: unpasteurized milk.

It’s a battle that’s been going on behind the scenes for years, with natural foods advocates arguing that raw milk, as it’s also known, is healthier than the pasteurized product, while the Food and Drug Administration says raw milk can carry harmful bacteria such as salmonella, E. coli and listeria.

“It is the FDA’s position that raw milk should never be consumed,” said Tamara N. Ward, spokeswoman for the FDA, whose investigators have been looking into Rainbow Acres for months, and who finally last week filed a 10-page complaint in federal court in Pennsylvania seeking an order to stop the farm from shipping across state lines any more raw milk or dairy products made from it.

The farm’s owner, Dan Allgyer, didn’t respond to a message seeking comment, but his customers in the District of Columbia and Maryland were furious at what they said was government overreach.

“I look at this as the FDA is in cahoots with the large milk producers,” said Karin Edgett, a D.C. resident who buys directly from Rainbow Acres. “I don’t want the FDA and my tax dollars to go to shut down a farm that hasn’t had any complaints against it. They’re producing good food, and the consumers are extremely happy with it.”

The FDA’s actions stand in contrast to other areas where the Obama administration has said it will take a hands-off approach to violations of the law, including the use of medical marijuana in states that have approved it, and illegal-immigrant students and youths, whom the administration said recently will not be targets of their enforcement efforts.

Raw-milk devotees say pasteurization, the process of heating food to kill harmful organisms, eliminates good bacteria as well, and changes the taste and health benefits of the milk. Many raw-milk drinkers say they feel much healthier after changing over to it, and insist they should have the freedom of choice regarding their food.

One defense group says there are as many as 10 million raw-milk consumers in the country. Sales are perfectly legal in 10 states but illegal in 11 states and the District, with the other states having varying restrictions on purchase or consumption.

Many food safety researchers say pasteurization, which became widespread in the 1920s and 1930s, dramatically reduced instances of milk-transmitted diseases such as typhoid fever and diphtheria. The Centers for Disease Control and Prevention says there is no health benefit from raw milk that cannot be obtained from pasteurized milk.

Taubes Was Right, It’s one BIG “Saturated” Lie…

We’ve all been told repeatedly to avoid saturated fats, and especially trans fats. We all know that they cause heart disease, and that eating them will kill us. Right?… Really?!?… Well as those familiar with this liberated site know, nothing could be farther from the truth.

The latter recommendation re trans fats makes perfect sense, given that Mary Enig, PhD proved in the early 1970′s that they were essentially poison to the body and totally shut down the prostaglandin pathway, among other metabolic insults. It then took the FDA a modest 26 years to determine that she was right and that trans fats are, indeed, “harmful” and required “labeling” so that the ever expanding fat-consuming public could be better informed about their toxic diet.

Trans fats, as many of you know, are a relatively modern invention (circa 1905 when Crisco — the ultimate trans fat — was 1st introduced into the marketplace) which are created by hydrogenating or partially hydrogenating a vegetable oil. In today’s vernacular, the processed food industry refers to these trans fats as High Palmitic Vegetable Oils (aka, HPVOs) Sounds really enticing, doesn’t it? Trust me, this is not a natural oil, nor is the process to make it, and certainly the human species knew that, which is why heart disease took a decided trend upward starting in 1920. It has been the nation’s #1 killer for the last three generations.

What is sparking this blog, and a heightened interest in fats, is a recent announcement that the Illinois House voted this week to “ban Trans Fats” by Jan 1, 2013. On one hand, that’s certainly a step in the right direction, but HB 1600 has yet to pass the Senate, and how many folks honestly think Gov. Quinn wants to be the only other Governor in the nation to ban this toxic substance on the heels of California? Illinois is a mega-grain state — me thinks the Farm Lobby will kill it. Only time will tell. And lest you think I’m being too cynical about this legislation, this bill also assures that trans fats will continue to be served in Illinois schools until 2016!, and the proposed law places no restrictions on the sale of pre-processed foods across the State. Whew!… Thank goodness, for a minute there I thought I was about to get healthy…

In any event, trans fats are a no-brainer for elimination. However, it gets far more complicated with saturated fats. Fact: 60% of our brain is comprised of Lauric Acid, a saturated fat. Fact: whenever we store fat on our body — it’s saturated fat. Fact: the very fats that nourish our heart – are saturated fats—principally Palmitic and Stearic!!! What I find utterly fascinating is that somehow “saturated” animal fat became demonized in the 50′s & 60′s and really picked up a head of steam in the early 70′s.

But then I just read something fascinating in Dr. Mark Hyman’s book, Ultra-Metabolism. He points out that grain-fed beef has 5X more saturated fat than grass-fed beef. 5 TIMES?!? I didn’t know that — did you know that?!?… Where have I been? I was utterly stunned. What you may find interesting is that it wasn’t until 1946 (about the time that Animal Fat Consumption starts to plunge, note the slope…) that cattle & pig farmers realized that they could feed their critters Corn & Soy which would cause them to fatten up much, much faster — as fast as though they were taking hormones. Hmmmm?… Could there possibly be any connection with obesity in America?!?… Nah, that’s too obvious.

This then prompted me to dig a bit further into saturated fats. It turns out that there are four (4) key types of saturated fatty acids: Lauric, Myristic, Palmitic and Stearic. And back in the 70′s when nutritionists, physicians, and politicians were all going postal on “saturated fats,” they basically trashed ALL saturated fats. That’s like saying that ALL teen-agers are drug addicts. No, just some are, and the same is true of saturated fats – just some are a problem. (Of course that’s the case, given that our body is made of and depends on saturated fats to function properly!) In any event, it turns out that THE saturated fat that got trashed the most — Stearic Fatty Acids – which are principally found in beef and beef products, have now been proven in numerous research studies to be neutral as it relates to any kind of elevation of total cholesterol, or LDLs. Imagine that… Would that rustling you hear be Ancel Keys, PhD turning over in his grave?…

And then I realized something critically important: ALL the studies addressing the “nutritional content of food” that have been done in America since 1946 are completely invalid, unless they specifically state that they are based on animals eating their natural diet — which Corn & Soy is NOT! So in the same way that you can no longer say “meat” in America — it must now always be “lean meat”– any time writers, doctors, nutritionists,  TV commentators, etc. make any reference to “trans fats,” they must always say “saturated fats and trans fats.” And this is where the confusion lies. Animals being fed industrial-grade, grain slop to accelerate attaining their market weight is not at all natural. It creates a very unnatural form of saturated fats – that do wreak havoc in our bodies. Imagine that. As Michael Pollan so eloquently states: “You are what you eat eats!”

In fact, given what Hyman references about a dramatic difference in Saturated Fats — based upon what the animal eats — tell me again why we shouldn’t eat the very fats that fuel and nourish our body — especially our hearts and our brains – when they are produced naturally?!? The tragedy of all this is that the public can’t follow this exhausting, and confusing shell game — and I don’t blame them. I’ve been working on this one issue for the last 18 months and am only now beginning to fully understand the game of deception that has plagued our nation over “dietary fats.” In a word: it is shameful. Shameful that Ancel Keys, PhD created this mess following Ike’s heart attack in 1955, shameful that lipid researchers were soooo casual and myopic in their dietary research trying desperately to link saturated fat to both cholesterol and heart disease, shameful that physicians who don’t know the first thing about food and nutrition continue to be cast as the “authority” on diet, and shameful that the food industry that created the whole “trans fats” fiasco, as a cheap, unnatural “saturated” fat, has been allowed to perpetrate this poison on the public and perpetuate this lipid confusion without consequence. (Yeah, I know, why don’t I tell you how I really feel…)

I share this with you all as you are among the select souls on this planet that are smart enough, compassionate enough and driven enough to do something with this knowledge. And that’s the truth! And what I’ve outlined above is the absolute truth — despite the relentless attempts by everyone and their brother to declare (i.e. deceive) otherwise. And this is what leads me to use my signature tag line: “We have been misled, we have been misfed…”

Food Day Campaign Will Encourage Americans to Eat Real Food

The Center for Science in the Public Interest announced plans this week for a nationwide campaign to change the way Americans eat and think about food.  Food Day will encourage people around the country to sponsor or participate in activities that encourage Americans to “eat real” and support healthy, affordable food grown in a sustainable, humane way.

Food Day will be observed on and around Monday, October 24, 2011, and will likely include a series of major events in Washington, New York City, San Francisco, and other major cities, and thousands of smaller events around the country.

The idea is modeled on Earth Day, say organizers, and they hope Food Day will inspire Americans to hold thousands of events in schools, college campuses, houses of worship, and even in private homes aimed at fixing America’s food system.  Like Earth Day events, a Food Day event could be as small as a parent organizing a vegetable identification contest at a kindergarten class—or as massive as a rally in a city park, with entertainment and healthy food.

According to the organizers, the campaign has five central goals:

  • Reducing diet-related disease by promoting healthy foods.  The CSPI believes that the American diet is too low in fruits, vegetables, and whole grains and too high in fatty meat, soft drinks, and salty packaged and restaurant foods—contributing to hundreds of thousands of premature deaths each year due to heart disease, diabetes, stroke and cancer.
  • Supporting sustainable farms and stopping subsidies to agribusiness.  Billions of federal dollars a year would be better spent helping environmentally conscious family farmers than huge agribusiness operations.
  • Expanding access to food and alleviating hunger.  Far too many Americans don’t know where their next meal is coming from, or have access to fresh produce in their neighborhood.
  • Reforming factory farms to protect animals and the environment.  Farming of animals can and should be done without cruelty, and without degrading the quality of life in rural America.
  • Curbing junk-food marketing to kids.  Food companies should not be targeting children with foods that promote tooth decay, obesity, and other health problems.

“Food Day will bring together a lot of people with common interests in food issues, but who otherwise haven’t worked all that closely together,” said Michael F. Jacobson, who founded CSPI 40 years ago.  “So whether your primary concern is human health, farm policy, or the quality of life in rural America, Food Day can be an opportunity to start solving local and national food problems from the ground up.”

Besides Jacobson, Food Day is led by honorary co-chairs Senator Tom Harkin (D-IA) and Rep. Rosa DeLauro (D-CT), and an advisory board that includes food author Michael Pollan; prominent physicians Caldwell Esselstyn, Michael Roizen, and David Satcher; nutrition authorities Walter Willett, Kelly Brownell, and Marion Nestle; public health expert Georges Benjamin; and chefs Dan Barber, Nora Pouillon, and Alice Waters.

“Why Food Day? It is time to make real food the number-one priority in our country,” said Alice Waters, proprietor of the acclaimed Chez Panisse restaurant in Berkeley, Calif.  “The choices we make about food affect our health, the health of the planet—and the way we live our lives.”

“Food Day is an opportunity to celebrate real food and the movement rising to reform the American food system,” the author Michael Pollan said.

Poll: Nearly One-Fourth Of The Swedish Population Are Now Eating Low-Carb

Cheer up fans of high-fat, low-carb living around the world because I’ve got some really exciting news to share with you today that will have you jumping for joy at the incredible progress being made about this way of eating right now in the nation of Sweden. Whether you realize it or not, there’s an outright low-carb revolution happening amongst the Swedish people that has been several years in the making thanks to an unprecedented chain of events that have unfolded featuring educated physicians and patients whose lives have been forever changed for the better because of healthy high-fat, low-carb living. This story I’m about to share with you today should inspire those of us in the United States, Canada, the UK, Australia, and everywhere else livin’ la vida low-carb is impacting the lives of real people.

I’ve been telling you about the rise of the low-carb lifestyle taking place in Sweden for over three years now, including conducting podcast interviews with several of the key players in the low-carb movement there like medical practitioner Dr. Annika Dahlqvist, activist Per Wikholm, and triathlete Jonas Colting. And I’ll be interviewing the great “Diet Doctor” physician Dr. Andreas Eenfeldt on my podcast later this year to talk about the overwhelming success he has seen with his brand new 2011 book detailing what they call LCHF (low-carb, high-fat) is all about. But excitement about LCHF hit a fevered pitch this week when a new public opinion poll about Swedish eating habits released on Monday showed nearly one in four Swedes identify themselves as eating a low-carb diet. INCREDIBLE! Needless to say, this has lit a fire of excitement amongst those who have been championing healthy high-fat, low-carb living there–and I think it will encourage low-carbers around the world to continue spreading the good news about what this way of eating has done for our weight and health.

For those of you who have not been following this story about low-carb diets in Sweden closely over the past few years, let me catch you up on all that’s been happening. In December 2005, Dr. Dahlqvist was reported to a government entity called the National Board of Health and Welfare (similar to the U.S. Food & Drug Administration) by a pair of dietitians who claimed she was putting her patients at “severe risk” by recommending a low-carb, high-fat diet for treating diabetes and obesity. An investigation took place to determine whether Dr. Dahlqvist should be stripped of her medical license or if she would be able to continue to use the LCHF approach with patients. While the investigation was ongoing, her employer informed her she could no longer use her low-carb nutritional plan with patients–so she quit and went into practice for herself while awaiting the result of the charges filed against her.

On January 16, 2008, the National Board of Health and Welfare made their decision after carefully examining all of the evidence presented to them and declared publicly that a low-carb diet is “in accordance with science and well-tried experience for reducing obesity and Type 2 diabetes.” WOW! Sweden is likely the first country in the world to have an official government board admit that low-carb is a suitable treatment for diabetes and obesity. Dr. Dahlqvist was willing to put her entire medical career on the line to defend the low-carb nutritional principles she knew was helping her patients. Although the odds were stacked against her, she was confident in the science and stood strong in the face off immense adversity. In the end, she came out of this intense trial victorious as the Swedish government now recognizes healthy low-carb living, albeit begrudgingly. But this was merely the catalyst for some truly great things to come for the LCHF movement that immediately took off in Sweden.

By mid-2008, a public conversation about LCHF started happening led by Dr. Dahlqvist, Dr. Eenfeldt, and others to begin reeducating Swedish consumers about what a healthy high-fat, low-carb diet looks like so they can make changes in their own personal dietary habits to deal with obesity and chronic disease. You could say a high-fat, low-carb diet explosion began taking place as LCHF bloggers began popping up everywhere featuring people whose lives had been changed as a result of this way of eating. At times it even got a little heated in televised debates like this one in 2009 because the adherents to the conventional dietary wisdom were none-too-pleased at this promotion of saturated fats to consumers for their health. Because of the amazing work she did leading the charge for LCHF, I named Dr. Dahlqvist to my Top 10 Movers & Shakers of 2009 list…but she began having some help from a fellow Swedish physician who was also a big believer in high-fat, low-carb nutrition.

Dr. Andreas Eenfeldt created his “Kostdoktorn” blog which has since expanded in 2011 to an English version called “Diet Doctor” as a means for promoting the principles of a healthy high-fat, low-carb, real food lifestyle change that can be used therapeutically for patients struggling with health issues traditionally treated by medical doctors pharmaceutically. He wanted to reach outside the borders of Sweden, though, and began attending some American obesity conferences like The American Society of Bariatric Physicians and Nutrition & Metabolism Society Symposium beginning in 2010 (and I named him to my Top 10 Low-Carb Movers & Shakers of 2010 for his tireless efforts to educate himself further to pass along to the readers of his top-rated low-carb blog in Sweden). We also signed him up to be a guest speaker on The Annual Low-Carb Cruise in 2010 to share about the remarkable success of LCHF in Sweden. His very first English presentation was very well-received by nearly 100 enthusiastic supporters of healthy low-carb living in the United States. With the much-anticipated January 2011 release of his Swedish language book on LCHF called Matrevolutionen, Dr. Eenfeldt has set the stage for even more widespread communication of the low-carb message to the people of Sweden–and quite possibly around the world if the book’s amazing success so far continues and is translated into other languages (I’m looking forward hearing Dr. Eenfeldt speak again and meet a group of LCHF advocates who will be joining us on The 4th Annual Low-Carb Cruise coming up May 1-7, 2011).

So, is the LCHF movement making a REAL difference in the lives of the people of Sweden? That’s what a new March 2011 poll of 1,000 Swedish citizens between the ages of 18-89 conducted by Demoskop wanted to find out. Commissioned by Pagina/Optimal, the leading publisher of LCHF and other low-carb books (including Swedish translations of bestselling low-carb books like Gary Taubes’ Why We Get Fat And What To Do About It, Leirre Keith’s The Vegetarian Myth and The New Atkins For A New You by Dr. Stephen Phinney, Dr. Jeff Volek and Dr. Eric Westman), they simply wanted to know the answer to the following question:

“Do you try to eat fat but minimize your intake of carbohydrates–the low-carb, high-fat or LCHF method?”

These numbers are pretty astonishing when you stop and think about it. Here are some of the key findings that are worth noting:

  • Nearly one in four (23%) respondents are carb-conscious
  • Five percent are hard-core adherents to high-fat, low-carb (LCHF) living
  • Interestingly, nearly twice as many women (7%) than men (4%) follow LCHF
  • The older respondents seem more carb-conscious than the younger ones
  • Nearly one-third 55-89 year olds are eating a low-carb diet
  • Low and medium income watch carbs at the same rate as high income
  • High income respondents are more likely to afford eating a LCHF diet
  • Retired respondents over 65 (7%) do LCHF more than working 45-64 year olds (5%)
  • 30-44 year olds support LCHF (7%) at highest percentage of total carb watchers (20%)
  • Students and the unemployed can’t afford to purchase LCHF foods, still watch carbs

    One of my Swedish readers told me the television news station that reported on this poll interviewed a dietitian rooted in conventional dietary wisdom about it and he said it was “all the normal nonsense” that you hear from these so-called health experts. She accused the Swedish people of being “carbphobic” and dismissed the findings as ignorance. Sounds like somebody has sour grapes to me and is extremely jealous of the attention being paid to a healthy and delicious nutritional plan that is greatly improving the weight and health of those who try it for themselves. The implications of this momentum happening in Sweden cannot be overstated. THIS IS HUGE!

    Juxtapose this new poll with a Google Trender keyword search for “LCHF” in Sweden and the picture will become even more stark by comparison:

    Prior to 2008, nobody in Sweden had even heard of LCHF. But after the National Board of Health and Welfare made their decision clearing Dr. Dahlqvist’s good name by noting a low-carb diet is “in accordance with science and well-tried experience for reducing obesity and Type 2 diabetes,” interest in the LCHF lifestyle began to skyrocket and the trend has not slowed down yet. In fact, Google searches for “LCHF” in Sweden have more than doubled in just the past year alone which likely led those people who were searching to visit any number of outstanding low-carb blogs there, get educated about what this way of eating is about, and then start doing it for themselves. That’s why the numbers in this survey were so incredible!

    The fact is this has happened very quickly mostly through word-of-mouth since LCHF has not been endorsed by the government or health leaders. Can you imagine if low-carb, high-fat diets were to be deliberately PROMOTED to the Swedish people as “healthy” what would happen? Those poll numbers above would easily double overnight and the health of the citizens there would improve dramatically without the need for taking risky medications or ever going on a hunger-inducing, unpalatable low-fat diet ever again! Restaurants and grocery stores would need to cater to the LCHF consumer by offering higher-fat food offerings to consumers such as butter, full-fat cheeses, cream, steak, and low-carb staples like spinach, broccoli and cauliflower. It’s a revolution happening right before our eyes in a country that could easily be setting a trend for other nations to follow!

    Most amazing to me is the fact that this has all happened on the grassroots level through the tireless efforts of a lot of people getting involved in promoting LCHF within their circle of influence. It’s as if people have given up being lied to about how to eat from those experts who are supposed to know better about what is most effective and now the people are turning to alternative sources of information coming from bloggers who are telling their success stories since they are real-life examples of what healthy high-fat, low-carb living can do. My speech on the Low-Carb Cruise in a few weeks is called “Following Your Passion To Change The World” where I will challenge the participants to find their talents and use them to bring about change in support of this amazing low-carb lifestyle. The time for making this happen is NOW!

    Will we see a similar trend like what has happened in Sweden start to happen someday soon in the United States of America? It may seem improbable and maybe even impossible to fathom right now. But perhaps the Swedes are giving us a foretaste of the future of America, Canada, the UK, Australia, New Zealand, and other countries around the world who desperately need their own dietary revolution to take place. I have a feeling it’s coming sooner than later and I’ll be here ready, willing, and able to do my part to help educate, encourage, and inspire the masses when it does. Will you?

    Are Americans Really Eating Too Much Salt?

    Even if they are not actually doing it, most Americans believe that reducing salt in their diets is a good, healthy and necessary thing.  Doctors are all for it and the USDA 2010 Dietary Guidelines for Americans promote it.  But there is an argument to be made that Americans really aren’t eating too much salt and shouldn’t be on reduced sodium diets.

    Speaking recently at a press conference criticizing the USDA’s Dietary Guidelines, Mort Satin, Vice President of Science and Research at the Salt Institute, which represents the salt industry, made the case for taste.  He points out that while the Dietary Guidelines recommend increasing salad and dark green vegetable consumption, the general population needs some salt to get past the healthy, but bitter phytochemicals in them.  He cites a broccoli study showing that reducing salt makes these foods less appealing, and without it green vegetables can “taste like grass.”

    Satin also points out that reducing salt intake may also exacerbate the obesity epidemic as people “consume more calories just to satisfy their innate salt appetite.”  He likens the situation to the introduction of ‘light’ beer, low-calorie soda and low-fat foods, all of which led people to eat or drink more of the engineered product.  It is likely, he says, that consumers faced with low-salt potato chips will simply eat more because they are not getting what they are craving.

    In general, according to Salin, Americans are eating less salt than ever.  Until the 1950’s when refrigeration became widespread, salt was the primary means of food preservation. Salt consumption dropped dramatically after that and today, says Satin, the levels of salt consumption in the Mediterranean diet, which is touted as healthy, have always been and currently are about 40% higher than in the US diet.

    The Dietary Guidelines are recommending a level of salt far lower than can be found in any other country in the world and lower than in any period in recorded history, says Satin.  He worries that the Guidelines “effectively place the entire population of the US into a massive clinical trial without the consumers’ knowledge and certainly without their consent.”

    Satin points to “considerable peer-reviewed clinical research” predicting negative consequences for population-wide salt reduction.”  And while the Salt Institute has, for many years, repeatedly asked the Secretary of Health and Human Services to support a large clinical trial that would show the health outcomes resulting from population-wide salt reduction, the request has always been refused.

    By ignoring available studies and refusing to conduct clinical trials, Satin concludes that the Dietary Guidelines on salt are “confused, simplistic and far more a product of ideology than of science.”

    RADIATION EXPOSURE INFORMATION AND ANTIDOTE

    With all of the uncertainty and conflicting reports regarding the Japan nuclear facility explosions, I think that the following article is very timely.  The fact that the US has placed over 100 machines to test radiation levels here in the States is very telling, even though we are told it’s nothing to worry about, because it is “very low levels” being recorded, if any. 

    It is those “very low levels” that can be most damaging as you can read from the following excerpt. 

    There is an herbal product that I recommend to my clients that contains “food” for the thyroid; dulse, kelp and irish moss.  I use it for both under and active thyroid conditions and you will read references to these ingredients below.

This website contains an overwhelming amount of information bundled together in a rambling jumble that jumps all over the place. With that said we do believe Dr. Apsley and his associates have a noble intent by publishing this site and are on the money with their philosophies and recommended health remedies. After reviewing this site, we were pleased to realize how closely his knowledge and experience come to being compatible with DNR, Inc. philosophies and modalities. The following excerpt on Radiation Toxicity Antidotes is not only educational, but timely as well.

     

    Radiation Toxicity Antidotesby John W. Apsley, II, MD(E), DC Q: What can I do now to protect myself from nuclear fall-out arriving from the meltdown of Japan’s nuclear power plants?

    A: History has taught us to “hope for the best,” but “plan for the worst” and to educate oneself better than the politicians or their official scientific spokespersons!

    The radioactive metals uranium, plutonium, cesium and strontium are of primary concern, right alongside radioactive iodide. Once lodged into our tissues, all will induce lethal tissue ionization, which over decades will derange genetic functions and kill many cells. To avoid this, the metals need to be removed from the cells. Specifically over the long term, radioactive cesium will concentrate in the fatty tissues, radioactive iodine in the thyroid gland and ovaries, strontium and uranium in the bone, and uranium and plutonium in the liver. For North America, over time this may/will lead to significantly greater levels of cancer or alternative forms of chronic degenerative disease in our children and young adults via the Petkau Effect.

    The Petkau Effect may be illustrated as follows: 

    A long term exposure of extremely low radiation (i.e., one-ten millionth of a rad) was found to be 100 BILLION times MORE lethal than a short term exposure to exceedingly high level radiation (i.e., 10,000 rads per minute). As it turns out, Petkau discovered that at exceedingly high radiation levels, the abundant free radicals generated in tissues tended to cancel each other out before they could do cellular damage. But at extremely low levels of radiation, these same free radicals – produced in minuscule quantities – remain unchecked. And any steady stream of unchecked free-radicals will efficiently and lethally cleave lipid cellular membranes like a hot knife slicing through butter once they overwhelm and exhaust cellular antioxidant defenses. This dramatically illustrates the non-linear aspects of dose (rads) to lethality. Most scientists specializing in the field of nuclear medicine are unaware of this fact. And most think strictly in terms of genetic damage, while the above presents its lethal affects upon cell membranes and only secondarily to the genetic core.

    Eclectic physicians often specialize in BioEnergetics, the Fourth Pillar to The Regeneration Effect. And what these experts will tell you is that select low levels of radiation that disrupt cell membranes will trigger attempts in tissues to regenerate the damage, which is termed autophagy. Just enough autophagy with just enough antioxidants and reserves of their respective substrates (building blocks) and other essential factors like oxygen and you are “In like Flint.” But too much autophagy with too little antioxidants or when coupled to conditions of hypoxia (low oxygen levels), and you start generating vast numbers of premature cellular deaths, and over the longer term cancer or devastating autoimmune disease. Most folks over 50 have under saturated tissue levels of oxygen, so this is something we need to keep in mind. Additionally, other stores of environmental toxins or unhelpful lifestyles which include the standard American diet and smoking will ensure low level radiation exposure can only increase risks to chronic degenerative diseases down the road. Perhaps most importantly, radioactive iodide may easily disrupt thyroid function permanently. With chronic lower thyroid hormone production, the risk to many chronic degenerative diseases dramatically goes up. Unfortunately, conventional medicine has failed to date to adequately appraise low thyroid conditions, so this only compounds inadequacies in statistical analysis.

    What we must all do now is to fortify our internal cellular milieu and bring online our very own Regeneration Effect within. So let’s begin…

    SHORT TERM ANTIDOTES:

    1.     N-Acetyl-Cysteine (NAC) is the most powerful short term quencher of ionizing radiation. It is a nutrient, a simple amino acid from protein. For adults (weighing above 150lbs) , it may be taken in dosages of up to 500mg daily for protection from toxic metals and other poisons. For younger adults weighing 100lbs to 149lbs, 400mg daily affords adequate protection in most situations. In children weighing less than 100lbs, but above 50lbs, 200mg daily is a suitable dose. For infants, toddlers or children weighing less than 50lbs, 50mg to 100mg daily may be used in juice, as long as no sensitivity to NAC arises (i.e., light skin rashes). In this manner, NAC may be used daily on an indefinite basis, as it is a harmless amino acid our bodies will use to establish antioxidant defenses and aid the immune system. It is also an adequate remover (i.e., chelator – from the Greek which means that which “grabs onto or claws into”) of toxic metals from the body, such as radioactive cobalt and directly and indirectly uranium. Uranium is quite stubborn about exiting without a fight and could require baking soda to speed things up – see references at very end of page – plus melatonin. Liver protection from fall-out radioisotopes like uranium, plutonium, etc… is nicely accomplished via combining NAC + Sea Vegetables (see next) + Melatonin + Selenium + small amounts of baking soda (see number 7 below for all advisories). Lastly – rarely some adults are sensitive to NAC, so be aware of special advisories regarding its long term use. In those cases, use high-quality Whey products.

    2.     Iodide is also a first line of defense mineral supplement, since it can out-compete radioactive iodide from entering into our bodies.11 Despite misinformation to the contrary, if you have no known allergy to shellfish or iodide, rationale supplementation with iodide can be a good thing. Remember, it is an essential nutrient our bodies must have every day to make adequate levels of essential hormones. Up to 1,000mcg daily are used for several short weeks from various sources, such as Kelp, Irish Moss or Dulse. For adults, up to 5 tablets per meal of any one of these may be wise. Rarely, some folks suffer fully reversible mild hair loss by taking iodide. By simply discontinuing the supplement for several days, this problem typically clears and resuming iodide intake at lower levels (200mcg-400mcg/day) usually does not bring back the problem. In the rare event any intake of iodide causes resumption of hair loss, substitute Chlorella or Spirulina below. Kelp and other seaweeds are also excellent chelators of toxic metals from the body, especially if high fiber intake is also being incorporated into the diet.

    3.     Chlorella (and other blue green algae) is a superior protector and chelator of radioactive metals from the body and contains no less than 20 superior neutralizers to radioactive poisons. 5 per meal (250mg each or 1250mg per meal) is a great dose for adults, 3 per meal for young adults and children, and 1 per meal for the very young. Make sure the Chlorella brand you buy has the outer cell wall “cracked” for best absorption. More may be taken, but it is suggested to never exceed 40 tablets daily for adults. Spirulina is a very acceptable cheaper alternative, although the taste is more objectionable for children. 

    4.     High quality bone meal (rich in Calcium & Strontium Hydroxyapatite) will also protect against radioactive strontium poisoning and penetration of uranium into bone. 3 per meal as labeled is suggested for adults, young adults and children, and 1-2 per meal for the very young.

    5.     Natural Vitamin E Complex - To stop cell membrane destruction. 800iu per day is an excellent dose for average adults, and 400iu per day for young adults and children. Toddlers and infants may be given 100iu per day in juice. (Side Note: Krill Oil, CoQ10(H) and Melatonin are more powerful than Vit. E, but also more expensive.)

    6.     Consuming High fiber and seaweed dishes on a regular basis must be used to maximize the best effects of the above tools. These will help insure removal (chelation) of toxic radioactive metals from the body.

    7.     Baking soda – Should be taken only on rare occasions, that is, only if exposures to uranium or plutonium can be confirmed, even in trace amounts, for your area. Baking soda is an efficient means to remove these metals quickly (especially uranium). There are several medical conditions which contradict taking baking soda, so be sure you have doctor’s clearance before consuming baking soda. Taking baking soda once weekly should pose no health threat if no other medical conditions are present which require restriction of sodium intake. For adults with no medical contraindications, and who have good reason to believe they have been exposed to traces of radioactive fall-out, especially uranium, taking 1 teaspoon of baking soda in 1 cup water or juice up to seven (7) times daily on an empty stomach – on one day out of every seven days – may be warranted. If you have a day of fasting each week, or one of light eating, this would be the perfect day to perform this procedure; but again, only if it has been confirmed you were likely exposed to extremely low levels of the radioactive heavy metals such as uranium.  Please see the long list of abstracts regarding baking soda as an effective chelator of radioactive elements at the very end of this document).

    Farm Food Voices DC 2011–Join Us

    It’s hard to believe it’s been a year since our last event, but it has.

    And Wednesday the 16th of this month is your chance to once again converge on the Hill and remind your Representatives and Senators that they do indeed work for us.
    The Farm Food Voices Feast this year is from 12-2p.
    The lobbying aspect of the day takes place before and after the mixer.

    This year, the region’s best Chef’s have joined their voices with ours and our local farmers’ to present for Congress and us a catered affair that would make a Kennedy envious.

    Poste Brasserie is returning, along with Coppi’s, Restaurant 3, Nora’s, Food Matters, Lavender Moon and Krishon Chocolates.  Making their debuts this year are Level Small Plates Lounge, Equinox, Ivy Inn, Maple Avenue.  Plus two of Top Chef’s finalists will be representing their kitchens—Volt and Alchemy by Carla Hall.  Main Event, just awarded Best Caterer in the Country, has graciously agreed to organize the load in, setup and load out.  Oh yeah, they’ll be roasting a whole pig from a local farm again this year.

    Journalist David Gumpert Says The Battle Over Raw Milk Goes Much Deeper Than Milk
