Liberation Wellness Dynamic Duo Make First Official Appearance Together!

On Thursday, 10/28/10, Kevin Brown and Maureen Diaz, will speak about “Liberation Wellness” at the United Steelworkers Hall, 53 East Lehigh Street (just north of the New Street/Fahy Bridge), Bethlehem. Doors open at 6:30pm. The presentation begins at 7. Free admission (donations welcome).
Kevin will talk about his groundbreaking nutrition plan that has proven to help many people become truly healthy and maintain normal weight. Maureen will walk us through implementing Liberation Wellness/Weston A. Price principles in our daily lives, providing “many helpful tips, solutions, and ideas about how to transform your life into one of vibrant health.”

Local producers may bring grass-fed, organic, and/or biodynamic products for sampling or sale. Attendees can check out the produce tables before and after the presentation (bring your coolers!). When did our nutritional values start falling apart?  Early to mid 1900’s, the message that butter, eggs, beef, coconut oil and other sources of saturated fats changed from good to bad.  Manufacturers found a way (laboratory experiments) to imitate the taste of foods and extend their shelf life (chemicals and preservatives). Then they sweetened our meals for us, literally, with added sugar, alternative low calorie sweeteners and fortified our foods with synthetic vitamins, minerals and fiber.  How can we make healthier food in a lab than a backyard garden?
We transitioned from butter, lard, and coconut oil to hydrogenated to partially hydrogenated vegetable oils.  Saturated with lies, marketers had us believing that this was heart-healthy and would be the solution to the rise in obesity and incidences of cardiovascular disease.  Natural, saturated fats were the culprits and the answer was in fake butters and oils. We bought into the low-fat craze. Manufacturers are quick to point out (market) benefits of eating whole foods while providing products that didn’t come close to whole.
And yet, America’s health hasn’t gotten any better. The foods our ancestors ate were no longer good for us, and for the first time EVER, we’re finding out that today’s children may not live as long as their parents.
Over time, true nutrition ideology got lost in translation.  We intellectually talked ourselves out of the game, believing we can eat ANYTHING we THINK is good for us.
People are made to believe that…
  • vitamins in a bowl of cereal are just as nutritious as eating organic fruits.
  • cooking with vegetable oils is better than grass-fed butter and organic virgin coconut oil.
  • it’s safe to consume aspartame, high fructose corn syrup and other alternative sweeteners and our bodies can naturally process these “just as real” ingredients.
  • commercially raised beef (full of hormones, fed an unnatural diet) is perfectly acceptable to eat.
We at Liberation Wellness want to empower people to have excellent health and normal weight by:
  • Teaching about REAL food (know which foods and ingredients matter and why numbers on labels don’t mean much)
  • Exposing partial truths and lies (truth about marketing hype and manufacturer claims
  • Changing the way people think about food (such as knowing when to say when and when to say MORE to eating)
About the Speakers

Parasites Love a HIGH-Carb Diet!

Why restricting starchy/high carb. foods reduces parasite symptoms:

“There was a period of two months in 2002 when I was able to exclude all sugar and grains from my diet, as I figured maybe it was candida. Just like the information on your website said, restricting carbs made me feel better. That’s a pretty harsh way to live though and when I lost the willpower to stick to a very restrictive diet, all the symptoms returned, and have since been getting worse.
K. was diagnosed with the parasite Dientamoeba fragilis in October 2004. She had suffered seven years of chronic health problems diagnosed as an irritable bowel.

Many people with parasitic infections find restricting carbohydrates and starchy foods such as bread, cake, rice, beans, potatoes, decreases symptoms. Parasites survive by ingesting these types of food. Restricting these foods reduces the colony of parasites. Starchy foods are often used to increase the number of organisms in a laboratory setting:
Pattern of excretion of D.fragilis following dietary adjustments:-
Researchers placed an infected subject on a diet of mainly carbohydrates. Between day 1 and 30 – increased numbers of D.f. were found. The subject was then placed on a protein diet and retesting began at day 60. Between day 60 to 80 less D.fragilis were excreted.

“Rice starch is an essential addition in xenic cultures, and is ingested by D.fragilis trophozoites, together with bacteria”.

D., who suffered chronic digestive disorders for many years, found a restricted diet helped reduce her chronic symptoms:

“The diet caused immediate improvement in a way nothing else had. I was much less tired than I had been for 2 months. My head was clearer. (I had previously been eating refined sugars in an attempt to boost my energy). But I was still quite unwell.”.

Based on the improvement her doctor felt her symptoms could be due to Candida overgrowth. After discovering this site, with it’s emphasis on specific testing for the two most common parasites to infect humans, Blasto. hominis and D. fragilis, D. was tested tested with a reliable lab. (A list of labs which use the specific stool collection and testing methods necessary to detect D.fragilis and Blasto. hominis can be found here). She tested positive for both parasites.

Unfortunately, as is the case with many of those who contact me, her doctor wasn’t convinced the parasites were causing her symptoms. She was treated with Tinidazole for two consecutive days (Tinidazole is similar to Flagyl and is used as standard therapy for parasitic infections)

She wrote:
“This made me feel really good (better than I had in years) for about ten days. I then became sick again.”
Further stool testing confirmed that both parasites are still present.

Flagyl and the drug Tinidazole have a high failure rate in the treatment of D.fragilis & Blasto.hominis.

SPECIFIC FOODS:

The following foods all contain a low/very low carbohydrate content, and should not aggravate the symptoms:

Pumpkin, artichokes, beetroot, cabbage, green peppers, tomatoes – grilled/fried, parsnips, summer squash, cabbage, cauliflower, Brussels sprouts, string beans, asparagus, onions, egg plant, salsify, okra, kohlrabi, endive, lettuce, tomatoes, cucumbers, celery, chard, spinach, broccoli, zucchini, onions (caramilised onions – ie. heated to a high temp as in frying – contain high levels of starch), salad greens, kale, spaghetti squash, bok choy, collard greens.

Fish & small amounts of meat are ok to eat. Avoid cheese & eggs. Milk in small amounts if ok if tolerated. Soy milk is generally better tolerated than dairy.

The following foods are high in carbohydrates/starches and should be avoided:

All grains: wheat, rye, oats, barley, corn, rice;
Potato & sweet potato, dry beans and peas, tapioca, sago, peanuts, chestnuts, bananas; green peas.

Many prepared foods contain starches and should be avoided:
couscous, breads, cookies, muffins, cakes, biscuits, pastas, and tabouli, breakfast cereals.

Sugar, honey, maple syrup & fruit should be avoided.

Raw Milk Consumers Win Round One

Judge Refuses to Dismiss Challenge to FDA’s Interstate Ban on Raw Milk

Falls Church, Virginia (August 20, 2010) – In a complex federal district court ruling, Judge Mark W. Bennett refused to grant a motion by the United States Food and Drug Administration (FDA) to dismiss a lawsuit filed against the agency by the Farm-to-Consumer Legal Defense Fund (FTCLDF) and eight other named plaintiffs. The lawsuit argues that federal regulations (21 CFR 1240.61 and 21 CFR 131.10) prohibiting raw milk for human consumption in interstate commerce are unconstitutional as applied to FTCLDF’s members and the other plaintiffs named in the suit.

In his August 18 decision, Judge Bennett denied part of FDA’s motion to dismiss while reserving judgment on the remainder. As part of his ruling, the judge ordered proceedings in the case to be stayed sixty days to allow plaintiffs time to decide whether to file a ‘citizen petition’ with FDA. The petition would ask FDA to clarify its interpretation of the authorizing statutes and regulations giving the agency power to ban raw milk for human consumption in interstate commerce. If plaintiffs choose to file the citizen petition, the court would continue to delay the suit until the administrative proceedings were completed or until FDA failed to take action within the time the law requires. If plaintiffs declined to pursue the citizen petition, Judge Bennett indicated the court would reconsider FDA’s motion to dismiss.

In Judge Bennett’s view, the main question FDA needs to answer in the petition process is “whether § 1240.61 applies to and proscribes the conduct of (1) persons who travel from one state, where it is not legal to purchase raw milk, to another state, where it is legal to purchase raw milk, legally purchase raw milk, then return to the original state where they consume the raw milk themselves or give it to their friends or family members; or (2) a principal and agent who agree that the agent will obtain raw milk out-of-state, where it is legal to do so, and to deliver it to the principal in the principal’s home state, where sales of raw milk are not permitted; or (3) a producer of raw milk who sells raw milk in an intrastate transaction to persons that he knows are from out of state.”

All of the individually named plaintiffs in the lawsuit fit into one of the three scenarios described above. Section 1240.61 provides in part, “No person shall cause to be delivered into interstate commerce or shall sell, or otherwise distribute, or hold for sale or other distribution after shipment in interstate commerce any milk or milk product in final package form for direct human consumption unless the product has been pasteurized….”

Judge Bennett sees the citizen petition as a way to resolve the question of “whether the plaintiff’s conduct involves or affects ‘interstate commerce’ sufficiently to fall within the proscriptions of § 1240.61, and, still more specifically, whether the plaintiffs’ conduct constitutes ‘delivery [of raw dairy products] into interstate commerce’ or ‘distribution’ of raw dairy products after shipment in interstate commerce.”

Plaintiffs have survived the first round in the case. They have until October 18 to determine what their next course of action will be.

Here’s the Review…

This video makes a very good companion to the Liberation Diet book which was reviewed in these pages in September 2009 and given a thumbs up.

Having read the book and learned the value of good fats and the dangers of too many starches, many people are often flummoxed as to how to put together a meal that incorporates these principles. And these are the people who already know how to cook whole foods from scratch! Add to them the legions who have never done more than microwave or order take out and you have an enormous audience who will benefit from this video.

In a clear and easy going manner Maureen Diaz shows us how to prepare complete, satisfying meals without undue demand on our time or budgets. One of my favorites is the broccoli fritatta. An entire meal in one bowl, taking minutes to assemble, it is offered as a breakfast option, but could well be served for lunch or dinner. After eating a portion of this I feel confidant that the dubious will realize that they do not need to load up on bread or potatoes to be satisfied.

This is not to say the video demonizes carbohydrates. In fact there is a demonstration for properly preparing porridge. Maureen merely show us how to dine beautifully with somewhat fewer starches and how to replace those calories with more nutrient dense ones from good quality fat.

Most of the basic WAP principle foods, such as bone broths, cultured dairy are included. Organ meats are hidden in a meat loaf. It is all there, without a lot of fuss or bother.

There were a few mentions of other recipes, such as one for homemade ketsup, that had clearly not made the final cut. This was only slightly disconcerting; a minor editing flaw that could be easily avoided in future episodes, which I hope will be forthcoming. Because once this one has been fully digested, I am sure the viewer will want more.

Bugs Are On The Menu

In the vast new world of nutrition misinformation, Americans are authorized by public officials like the USDA and medical professionals like the AMA to eat many small meals a day.

I believe this directive to be one of the biggest reasons for the obesity crisis in our modern culture, it has a devastating negative effect on health, and promotes only the enormous profits of the Fake-Food Industry and Big Pharma!

But that is another story,

I would like to talk about small meals and fast food, but what I mean is some the smallest and the fastest of the animal foods – BUGS!

Entomophagy (from [Greek ἔντομος éntomos, "insect(ed)", and φᾰγεῖν phăgein, "to eat", which together means "insect eating") is the practice of eating insects as food.

The Bible points out that all animal food is authorized by God to be eaten for food. In fact, God particularly mentions the bugs, lizards and snakes (called creeping things) as to let us know that they are allowed and would be appropriate for human consumption.

Dr. Weston Price, known as the Father of clinical nutrition, reported that the some of the healthiest people groups in the world, were eating bugs and the eggs of bugs at certain times of the year for the nutritional value. In fact millions of people for thousands of years have been and continue to eat insects as part of a very healthy diet.

Insects often contain the fat soluble activators A,D and K2 and some have B12 as well as other important nutrients.

Here is the nutritional profile of 100 grams of crickets:

121 calories,
12.9 grams of protein,
5.5 g. of fat,
5.1 g. of carbohydrates,
75.8 mg. calcium,
185.3 mg. of phosphorous,
9.5 mg. of iron,
0.36 mg. of thiamin,
1.09 mg. of riboflavin,
3.10 mg. of niacin

Bizarre Foods

Recently there has been a very interesting TV show airing nationally hosted by food explorer Andrew Zimmern. The show is called Bizarre Foods.

Andrew travels the world and has a meal with local people who’s culinary practices are very different from modern America, but I have noticed they are not so different from each other.

I enjoy the show very much and secretly wish I could taste at least some of the these exotic recipes from around the world.

I do think that the chemical compounds and artificial fake foods that make up much of our modern American so-called food choices, it is we who are eating the Bizarre Foods, and it is they that are eating more like a human being!

Fast Food

Although I am not a proponent of snacking or fast food, it seems if there was every a healthy, convenient, inexpensive snack food, insects are it. An entire industry of McDonald’s, Burger King, etc as well as the convenience stores like 7-11 would be in a very different environment if Americans were eating bugs.

You know, seeing how clever and entrepreneurial they are, I could foresee French Fries being replaced with French Fried Bugs!

Now that I think about it, we could call them McBugs or McFrogs!


The Importance of Vitamins A, D, K2

The foundation of human health is FAT. and many cultures get the all-important nutrients found exclusively in saturated animal fat from livestock and fish.

If however a people group do not have access to fish or cannot afford livestock, God’s exquisite design is that bugs are very readily available almost anywhere and loaded with the nutrition people need the most!

So How Do They TASTE?

That is a good question. I have a saying concerning food taste, which is, follow the law of the jungle. The law of the jungle says “eat what’s best for you, not what tastes the best!.”

If you have a plate of liver and onions, and a plate of ice cream, and you have a taste test, the ice cream will win almost every time. BUT- the liver is much better for you. We should not always make taste the decider in our food choices, as this leads to sweeter and more flavor enhanced foods getting eaten more often.

I must admit however, I have never eaten bugs! According to many, they taste great, but I cannot speak from experience.

Here is a recipe for insects

Ant Brood Tacos

2 tablespoons butter or lard
1/2 pound ant larvae and pupae
3 Serrano chilies, raw, finely chopped
1 tomato, finely chopped
Pepper and Cumin, to taste
Oregano, to taste
1 handful cilantro, chopped
Taco shells, to serve(you can pass on the shells)

Heat the butter or lard in a frying pan and fry the larvae or pupae. Add the chopped onions, chilies, and tomato, and season with salt. Sprinkle with ground pepper, cumin, and oregano, to taste. Serve in tacos and garnish with cilantro. (Not living in an area exceptionally prolific with ants, I have never been able to try this recipe. But it sounds perfectly delicious! I found it in ‘Creepy Crawly Cuisine’, an excellent recipe book.)
