A PRIMER ON PROPAGANDA

Posted by truthinthepublicinterest on December 29, 2010

And now,  a word or two about our sponsors….

The word ‘propaganda’ as it is used today, did not always have the primarily negative connotation that has become associated with it after World War II.  The Third Reich made extensive and effective use of this technology enabling it to generate support to prosecute wars of hatred and intolerance against people inside and outside the country.  And, if you stop to think about it for a moment, such powerful and effective societal manipulation obviously did not simply fall into the dustbin of history and cease to exist when the Third Reich fell.  Hence the need and desirability of this Primer on Propaganda.

Before WWII, the science and practice of propaganda was still a maturing and relatively untested technology.  Hitler’s Germany became its first society-wide success story, setting the stage for its planetary application which has now become so ubiquitous, so deeply and unconsciously embedded and accepted in our experience, as to be practically invisible.  Prior to the second world war, however, this emerging field was much more openly discussed and was widely heralded as having great promise to ‘educate’ and ‘inform’ the masses.

Edward Bernays (1891-1995)

The pioneer of this new field was an Austrian-born American by the name of Edward Bernays, who is widely recognized as “the father of modern public relations.”[1] His personal background, intentions and understanding as to its need and purpose (not to mention his future employers) are generally less well known however.  In the early 1920s, Mr. Bernays published the seminal work in this new field.  The book was simply titled “Propaganda” and was used as a graduate level text.  At the time, it was presented as a necessary and benign means of ‘e

ducating’ the common man.  The issue at hand was how to generate public support for national social and political policies in the most efficient and effective manner.

Being the nephew of Sigmund Freud, Mr. Bernays was no neophyte when it came to his understanding of unconscious and subconscious human desires and motivations.  Taken as a whole, he believed these unconscious drives led to the necessity of “enlightened despotism” in order to control the otherwise dangerous “herd instincts” of society.[2] He made no effort to hide his motivations and reasons for developing technology for the expressed purpose of controlling the public mind.  In his own words:

“If we understand the mechanism and motives of the group mind, is it not possible to control and regiment the masses according to our will without their knowing about it?  The recent practice of propaganda has proved that it is possible…”[3]

This is the most fundamentally important aspect of modern ‘public relations’ to understand and to appreciate.  Namely that its primary purpose is, was, and always has been, to control the public mind, to generate the accepted realms of discourse, understanding and perceptions of the public at large, without their conscious knowledge or consentfor their own good.  This process is called propaganda, public relations, advertising, and more honestly, brainwashing.  Despite what more (potentially) innocent modern-day media moguls and advertising experts may believe or say, all of these practices essentially refer to the same process and objective, namely, using mass media to effect control of public beliefs, desires and actions by manipulating the subconscious.

The second primary distinguishing characteristic of conditioning/propaganda/advertising/brainwashing is that there will always be resistance to uncovering it, to becoming conscious of it and its effects.   It is always designed with built-in protective mechanisms, otherwise it would not remain as well hidden, underexposed or effective.  Therefore, anytime anyone is being pushed up against belief systems that have been impressed upon them in this way, they will feel resistance of some kind.  It will often come as an emotional response, ranging from slight discomfort and disquiet to extreme upset and anger.  It will often take the form of ridicule, derision or dismissal (think how most people react when they hear the words “conspiracy theory”).  This is the second defining characteristic of conditioning.

We’ve all seen pictures of goose-stepping soldiers.  This kind of conditioning did not stop with Hitler’s Third Reich, with Russian Communism or with China or North Korea’s statist control structures.  It did not, and is not, just happening to them.  It is happening to us, now.  The disquieting reality I have accepted about my culture, and about myself, that I am asking you to consider is that, in many ways, we are those goose-stepping soldiers; and not only are we them, but we are conditioned to resist acknowledging it.

We have all been deeply and powerfully conditioned, in ways we often don’t recognize, to see things a certain way, to believe things that suit the interests of others and not ourselves.  And at some level, we know it.  Those of us familiar with the information on this blog see it every day.  We hear it on radio and TV talk shows, in the papers and in books.  People being told, doctors, nurses, politicians, radio and TV talking heads and the man on the street parroting what they have heard, and know to be true about cholesterol, saturated fats, heart disease, and all manner of misguided understandings regarding health and wellness. We can easily see such conditioning…in others.  It’s all around us.  Many of us, probably most of us, are painfully aware of it every day.  In the public realm, on talk radio and in print media such recognition often carries large helpings of sarcasm and ‘how-can-they-be-so-hopelessly-ignorant’ rhetoric along with it.

But it seems we all think it hasn’t happened to us.  We all think that we alone (or nearly alone) have risen above and reasoned our way out of the trap of unconscious manipulation.  We all pretty much know what we believe, why we believe it, and why we’re right and everybody else has got some, or most of it wrong.

And don’t you see?  It can’t be that way.  It can’t be that we’re the only ones who’ve got the straight scoop about it all.  But most of us honestly seem to think we do.  And that’s the whole point right there.  Because even when we have recognized, dissected and marveled at specific areas where we have seen behind the curtain, we are all still swimming in a sea of manipulation and conditioning that effects our belief systems; that has informed the choices we make about our diet and our health; that has provided the ideas and understanding we have about what’s so, what’s not so, what’s possible and what’s not possible.  Most of you are well-acquainted with the misleading information and ideas promulgated about food and health that inform the majority of public opinion.  Now consider that a similar depth and degree of misinformation and manipulation adheres to the realms of energy, money, medicine, and media.  Consider that we all are conditioned in ways we are not aware, to think, to feel, to believe, and to act in accordance with some external intent and purpose.

The point here is not to become paranoid, it is to become conscious.  It’s not time to see through the looking glass anymore, it’s time to step outside the looking glass altogether and challenge, consider and reset our own belief systems and take greater responsibility for all the material we ingest and propagate, be it physical or ideological.  The best place to start is with the food we eat, the next place is the information we accept as truth.  To me it seems one of the hardest lessons, to accept that in today’s media-mediated society, there will probably always be areas where I, and others, have been misguided and misled.  A big part of how well we navigate all the changes we see coming and happening around us will be how open and willing, how supple and flexible we can learn to be with regard to much that each of us has taken as ‘truth’ to this point.  Food is an obvious example for all of us here, but be assured it is not the only example for any of us.

Help Stop the Destruction of Family Farm Livelihoods!

Posted by Maureen Diaz on November 9, 2010

This from Weston A Price Foundation today. Please take the time to read and understand what is happening!

SUPPORT MORNINGLAND DAIRY & ESTRELLA FAMILY CREAMERY!
HELP STOP DESTRUCTION OF RAW CHEESE INVENTORIES

Farmstead cheese operations–Morningland Dairy of Mountain View, Missouri and Estrella Family Creamery of Montesano, Washington–face upcoming legal battles which could result in court orders for each dairy to destroy its entire cheese inventory for allegedly being adulterated. The FDA is now taking aim at raw cheese producers and has created a climate of fear among those who make farmstead cheese for a living. The agencys longterm goal is to eliminate access to raw dairy products. Read “FDA’s Ace in the Hole” at www.farmtoconsumer.org/ace,

On October 22 the Missouri State Milk Board, through the Missouri Attorney General’s office, petitioned the Circuit Court of Howell County to obtain a court order requiring Morningland to destroy 50,000 pounds of cheese (market value of about $250,000) located at Morningland’s cheesemaking facility because samples of Morningland Dairy cheese have tested positive for Listeria monocytogenes [L. mono is widespread in the environment and many subtypes of this bacteria have not been implicated in human illness] and Staphyloccocus aureus [Staph. aureus is present normally on everybody's skin and is considered protective. Most subtypes of this organism do not produce the toxin which can occasionally cause vomiting. Gastrointestinal illness from Staph aureus is self limiting-meaning medical treatment is not necessary].

On October 21 the United States Marshall Service executed a seizure order issued by a federal district court against the entire inventory of raw cheese located at the Estrella Family Creamery (EFC); FDA is attempting to get the dairy’s cheese inventory destroyed because cheese samples and environmental swabs taken at the EFC facility tested positive for L. mono. Under federal law EFC has thirty days to make a claim on the seized cheese which owners, Anthony and Kelli Estrella, are in the process of doing. If the court with jurisdiction over their case rejects the claim, then their cheese will be destroyed.

In neither the Morningland case nor the Estrella case has there been any reported illness from the consumption of cheese. In fact, there has not been any case of illness attributed to Morningland products in the thirty years it has been in business nor has there been any illness attributed to Estrella products in its seven years of operation. Joe and Denise Dixon, owners of Morningland, have developed a loyal following and sell to hundreds of retail stores across the country as well as direct to consumers through their mail order business. Anthony and Kelli Estrella have won numerous awards domestically and internationally for the quality of the cheese they produce.

What is unjust about the actions taken against Morningland and Estrella is that there has not been an adequate level of proof shown to establish that the bacteria found in the cheese and the environment are actually harmful to human health. There are many subtypes of L. mono (and Staph. aureus); as mentioned above, many of these subtypes have not been found to cause illness in humans. The agencies have the capability to determine the subtype of a pathogen found and whether that particular subtype is on record as having caused human illness; if the subtype has not, then there is no adulteration and no need to destroy the product.

Neither the FDA nor Milk Board, which is working at the direction of FDA, has conducted any testing to determine the subtype. Once the agencies had the initial positive tests, they should have done subsequent testing for the subtype. Even if the subtype is known to cause illness in humans, it still needs to be determined whether the amount of bacteria in the food is enough to actually do so. FDA has a zero tolerance policy for L. mono, a standard widely rejected by the scientific community throughout the world. The zero tolerance policy, in fact, reduces the incentive to test for L. mono.

What stands to happen now is that the dairies could be forced to destroy hundreds of thousands of dollars in product that are no threat to the public health. Morningland and Estrella have suffered significant financial losses as it already is; neither has produced any cheese in the last two months. The destruction orders from the courts would further cripple their businesses, if not entirely shutting them down.

TAKE ACTION TO HELP

Both the Dixons and the Estrellas are fighting government attempts to destroy their cheese while currently earning little or no income from their farming operations. In addition to the money needed to pay for living and farming expenses there will be significant court costs incurred to overturn the destruction and seizure orders. The outcome of the Morningland and Estrella cases will have an impact on freedom of food choice in this country.

Your help is needed. For those wanting to contribute money towards this fight, donation pages have been set up for each dairy:

BACKGROUND – Morningland Dairy

Morningland Dairy cheese was seized by both FDA and CDFA in the June 30 raid on the Rawesome food store in Venice. In August CDFA informed the Missouri State Milk Board that samples of Morningland cheese had tested positive for L. mono and Staph. aureus. The evidence is that the procedures the agency used in taking the cheese from Rawesome and recording the test results were sloppy at best. On August 26 the Milk Board issued Morningland orders not to ship any cheese at the facility and to cease all production.

On August 27 Morningland sent cheese samples off for testing. Unfortunately, like in California, proper protocols were not followed in taking the samples. A number of the samples came back positive for L. mono and Staph. aureus.

On August 31 Morningland issued a voluntary recall asking their customers to either destroy or return over 60,000 pounds of cheese produced from January 1, 2010 onward. On August 27 FDA sent out a press release as a voluntary recall by Morningland when the Dixons had not yet decided whether to issue a recall. From August 30 through September 1, FDA conducted an inspection of the Morningland facility taking one hundred environmental swabs, all of which tested negative for pathogens.

On September 24 the Milk Board verbally requested that Morningland destroy the entire cheese inventory; the Dixons asked that the request be put in writing, which was done on October 1. Morningland responded by objecting to the destruction order and proposing that each batch at the facility be tested, allowing the sale of only those batches of cheese testing negative for contamination. The next day, the Milk Board rejected the Dixons’ proposal, petitioning the Howell County Court to order that the product be destroyed. The hearing was scheduled for October 8, giving the Dixons almost no time to prepare a defense and was only cancelled when a scheduled state witness was not able to attend. On October 22 the Milk Board again filed a petition for a condemnation order that is currently before the Howell County Court.

BACKGROUND – Estrella Family Creamery

In February, the Estrella’s received a call from the Washington State Department of Agriculture (WSDA) informing them that a wheel of Estrella cheese purchased at a retail outlet tested positive for L. mono. After a follow-up visit to the Estrella facility by WSDA inspectors turned up more positive results for L. mono in sampled cheeses and in the environment, Estrella issued a voluntary recall for several different cheeses as well as throwing out thousands of dollars in cheese inventory. They then took about a month off from making cheese to work on a physical upgrade to the facility. After the dairy resumed production, WSDA returned to the facility and took thirty environmental swabs with one of them testing positive for L. mono. The inspectors were not concerned about the positive test, telling the Estrellas, “Listeria is everywhere, you will never totally eradicate it but you have to control it.”

From the time Estrella reopened until August, no cheese, produced post-recall, tested positive for any pathogen. Then FDA stepped into the picture; on August 2, FDA officials showed up to conduct a three-day inspection. They took 151 environmental swabs, four of which tested positive for L. mono (including one on a ceiling switch far from any cheese and another outside the cheese room on a slider door track). After the inspection, the FDA inspectors discussed the results with the Estrellas; they did not indicate that the swabbing or inspection results were unacceptable nor did they use language describing the facility as filthy or unsanitary. They only suggested some minor changes to be made in the facility’s operation.

During a subsequent visit on August 16, an FDA investigator collected a sample of cheese that was also found to be positive for L. mono. The sample came from Cave 3 (Estrella has four cheese caves) which was the area where the dairy had the most problems in February. FDA claimed their testing showed that the strain of L. mono found in February at the facility and the strain found in the testing conducted there in August were indistinguishable”.  On August 30 Estrella took cheese samples for testing, four of which came back positive for L. mono; all four were from Cave 3. On September 3 the agency requested that Estrella recall all cheese products. The Estrellas declined the request; however, the company destroyed all cheese located in Cave 3.

On September 4, FDA issued a press release advising consumers that “consumption of all Estrella Creamery cheeses put them at risk for L. mono related illnesses.” On October 21 the U.S. Marshall executed the seizure order covering all the cheese inventory at the Estrella facility; the order was issued on the grounds that the cheese was adulterated since it had “been prepared, packed, and held under unsanitary conditions whereby they may have become contaminated with filth or whereby they may have been rendered injurious to health” in violation of the Federal Food, Drug and Cosmetic Act. As much as 80% of the “seized” inventory consisted of long-aged cheeses, such as gruyere and cheddar, that do not support the growth of L. mono. None of these long-aged cheeses at the facility had ever tested positive for L. mono.

Again, in neither the Morningland nor the Estrella case had any of the positive samples for L. mono been tested to determine whether they were of a subtype that had actually caused illness in humans; the same goes for the Morningland positive samples for Staph. aureus. Under the Federal Food, Drug and Cosmetic Act, if a food contains a subtype of L. mono (or of any other pathogen) that is not found to have been harmful to human health, then the food is not “adulterated”; if the subtype of L. mono found in an environmental swab is one that has not been shown to cause illness in humans, then there should be no finding of adulteration. If their cheese can be destroyed just on the basis of an initial positive test for L. mono, then the Dixons and Estrellas are being denied due process.

For small food producers, one recall or destruction order can put them out of business. Due process of law needs to be upheld to protect producer from the reign of terror FDA is waging against farmstead cheese operations; otherwise, FDA will continue to go unchecked after raw dairy producers who have harmed no one with their products–working toward the agency’s eventual goal of eliminating access to raw dairy.

Food: when you get right down to it, it’s pretty simple really.

Posted by Dr. Richard Walicki on October 17, 2010

Whether we like it or not, food is often a political issue.  And as with so many things political, the underlying factor is money.  The trouble with this particular diet-money relationship is that when it comes to something so intimately connected to our health and survival as food, it can lead to some very untoward and unexpected results.  It should be pretty plain to the casual observer that people tend to get what they put their focus on.

So for those focusing on profit, they are likely to achieve it.  But at what expense?

Take, for example, the emergence of antibiotic-resistant “super-bugs.”  There are several strains that have been responsible for outbreaks of both bladder infections and severe intestinal sickness.  Genetic tests have confirmed that this is a direct by-product of antibiotics used in farm animals destined for our food supply.  Of course, many people understand that free-range animals don’t need antibiotics unless they become sick.  The fact that they are not confined in spaces that promote disease and because they are well fed are preventive measures.

Or do they really understand this?

Certain regulatory agencies, possibly yielding to agribusiness lobbyists, don’t seem to be willing to acknowledge the connection, whereas others – such as CDC director Dr. Thomas R. Frieden cited “compelling evidence” of a “clear link between antibiotic use in animals and antibiotic resistance in humans.”  It is interesting to note that, apparently, Denmark has already taken steps to ban antibiotic use in their farm animals.  What they found is that they were able to reduce health risks to humans without significantly harming farmers’ incomes.   Antibiotic resistance has declined and livestock and poultry production have increased.  Hmmm. . . .  That doesn’t seem too hard to understand.

In fact, organic farming as a concept is so simple, even an eleven year old can get it.  Maybe the young man in this video needs to be hired as a government consultant.

The Raw Milk Revolution

Posted by Kevin Brown on October 14, 2010

There’s a battle going on in America right now and it’s gotten really ugly very quickly. No, I’m not talking about the state of politics, the debate over religion, or any of the other usual suspects. This fight is about the rights of Americans to have access to real food. And we’re not talking about that stuff sold in grocery stores under the guise of “food” either. It’s real, whole, unadulterated foods that are grown and harvested on local farms that provide far superior nutrition and nourishment to the mass-produced versions sold in supermarkets from coast to coast.

The problem is one of access and the culprit standing in the way most of the time are the government bureaucrats who seek to destroy the very fabric of what once made this nation so great. The crux of this issue centers around the sale of raw milk which is currently illegal to purchase in stores in 40 states. One of the leading voices in support of local farmers attempting to provide healthy raw milk products to the consumer is journalist David E. Gumpert and he chronicles the travesty happening with this issue in his book The Raw Milk Revolution: Behind America’s Emerging Battle Over Food Rights.

I’m fortunate enough to live in one of the states where raw milk is legal (South Carolina) and can drive down to a local store about a mile from my house or the family farm about 10 miles away to purchase it without fear of breaking the law. Although I don’t drink a lot of milk because of the natural sugars that are in it, I do enjoy a glass of raw milk from time to time as well as consuming raw cheeses as part of my healthy low-carb lifestyle. It’s a privilege that can be taken for granted by people who have access to these foods because not everyone is so fortunate to live in an area where raw dairy is allowed to be legally sold to them.

Food and the 2010 Elections: A Few Practical Tips for the Upcoming Elections

Posted by Liz Reitzig on September 28, 2010

You can do more than just vote this election cycle

Most politicians are unaware of the importance of real foods both socially and politically. They remain ignorant of the tidal wave of consumer demand that is fast approaching.  It is our job as people interested in real foods, to educate them.  Campaigns are a great place to start.  It is a time when politicians are seeking votes and tune into what their electorate is thinking about.

If you already have a candidate that you support, campaign season is a great way to get them thinking about food related issues.  If you’re not even sure who is running, look them up and start talking to them about real foods. (Google search your state and board of elections)

Some great ways to get politicians engaged are to invite them to a local foods meeting, farm tour, screening of one of the food documentaries, talk or presentation that you are hosting or anything else that you think will help convey the message of real foods.

Make sure to point out to them the connection between supporting local farms and a thriving rural economy. Most politicians have no idea the level of regulation that impedes access to real foods.  (This is in the bureaucrats department usually)  They do not realize that the over-burdensome regulations can keep a farmer from making a living on their farm.  In a depressed economy, tying it all together for them and pointing out the relationship between supporting small farms and boosting rural economies, can sometimes make all the difference.

On the National level, if you do not already know, find out who is running for Congress in your district. Representative are elected every 2 years and some Senators are up for reelection this year.  Call their campaigns and ask where they stand on the food issues that are important to you.  For example, ask them if they would support the bill that lifts the ban on the interstate shipment of fresh milk.  Most of them have no idea what is going on in the “real food world”  It is really up to you to educate them, get a general knowledge of where they stand on food related issues and if they get elected follow-up with them once they are in office.

Check out their voting record! This is important.  Politicians can and will say anything they think you want to hear. Do the digging so you know how they voted on certain key pieces of legislation so that you can be prepared when speaking to them.

On the state level, most of the State Assembly positions across the country are up for reelection this year. We can have tremendous impact on the state level by talking with those who are campaigning and bringing an awareness of food issues to them before they even reach office.  It is not unusual to speak directly with your elected representatives or whoever is running for office in your district.  Everyone has a state Senator and a state Representative (sometimes called Delegates, Assembly persons, etc.)  Now is the time they are campaigning.  You can get active on the campaign of someone you support (you can support and volunteer for those outside your district as well) and you can bring awareness of food issues to candidates you don’t necessarily support but who need to be educated on real foods.

In my years of doing this there are a few golden rules to always keep in mind:

  1. It is ALWAYS worth it! Whatever time and energy it takes to speak to someone, it is always worth the time, energy, exhaustion etc.
  2. You are making a difference in their lives! When you speak to elected officials, candidates and their staff, you are providing them with information that will change their lives.  My first year working in Annapolis, I gave information about fresh milk to my Delegate’s aide.  She was so intrigued she tried some milk at my encouragement.  She has tackled some serious health issues, buys fresh milk weekly and credits the milk for much of her recovery.
  3. Persistence! they are busy and this is not in the front of their minds.  You’ll likely not get a call back but keep calling.  And be nice about it.  They are people too with loved ones who will benefit from the information you have.

I know it can be intimidating to make that first phone call, but it is worth it and you are making a difference in people’s lives.  So go on out there and tell your candidates about real foods!

Please, comment and let us know your experience with this.  It encourages people when they see that others are making the contacts.

Understanding Food Borne Illness

Posted by Paul Ericson on September 8, 2010

The first thing everyone needs to admit is that food borne illnesses are unavoidable. By this I mean there is no way to eliminate this problem. So it is always going to be about risk management and reducing the problem as much as is practical (not possible).

Sources

The first thing to ask is where do pathogens come from? There are three major sources of pathogens.

First, they are bred intensively in Concentrated Animal Feeding Operations (CAFOs). We know for example, that taking cattle off their usual high corn-soy ration and putting them on hay/grass for 5 days allows them to shed 80% of their E.Coil 157. But this is not the solution. Banning CAFOs is the solution. Not only are pathogens being intensively bred in CAFOs, but novel strains that are antibiotic resistant are being created. It’s been estimated that up to 75% of all antibiotics produced in the world are fed to animals, not used for medical treatments.

Second, they come from irrigation water. I saw one study at a recent conference where 100% of the samples tested positive for E.Coli. Should we ban irrigation? Perhaps. Water access is turning out to be a huge problem. Banning irrigation certainly takes some of the fuel off the fire. Plus it would give “local” a huge boost as so much of our produce is grown on irrigated land in California and other warmer areas. The last big spinach scare has been blamed on “feral pigs”. I find this hard to believe. I also haven’t seen any physical evidence. Blaming irrigation water is too risky politically. Feral pigs can’t answer back so they get the blame–just like butter.

The third source is processing facilities. And this really gets to the crux of the problem. It seems that we just can’t keep processing facilities clean, despite millions in equipment and heavy use of toxic chemicals. Even pasteurization isn’t fool proof as the many deaths from pasteurized milk can attest. Even the financial incentives are correct, yet they can’t stay clean. The spinach industry lost $100M in sales after just one well publicized outbreak.

There are competing stereotypes. One is that the low-tech little guy can’t keep it clean but the big, modern guy can. The other is that the little guy, “who has to look the customer in the eye” is cleaner. The sad reality is that no one can stop pathogens and size doesn’t matter on this narrow point–everyone is dirty. But in the end size matters and little is better. The reason is that when a single plant is supplying all the lettuce to thousands of Wal Mart stores, if it has a contamination issue, millions of people are at risk. But the local guy at the farmer’s market can only sicken a handful of people.

Solutions

The solution is to get rid of big processors. They are just too risky. They are food WMDs. The problems with this solution are manifold. For one, the big guys have a lot of political clout, so getting rid of them is easier said than done. It’s worse than taking on big tobacco–big food is bigger and more powerful. The other problem is that regulators think they can inspect this problem away and the mere thought of mushrooming the number of sites to inspect is just too overwhelming.

Banning CAFOs is part of getting rid of big processors. Banning irrigation is part of getting rid of big produce. It is encouraging to see that the USDA is working to develop regional food hubs. This is a step in the right direction. Also, the Justice Department is investigating anti-trust violations in the food industry–don’t hold your breath. But they are going after Dean Foods.

Other solutions are to develop food handling guidelines and training programs for growers. If we are going to be successful in transitioning to a locally based food system, this is an essential element.

But the best solution is actually getting the message into the home. There are numerous studies showing that home-based food preparation is a major cause of food borne illnesses. Cross contamination of raw food and improper cooking are just two examples. Another is the loss of traditional food preparation knowledge. Lacto-fermentation is an excellent way to keep foods safe as the lactic acid produced by bacteria suppresses pathogens. Also, the bacteria are probiotic and help strengthen our guts. We’re turning into a nation of microwavers and this has to change.

Hidden Truths

As with so many other topics of nutrition, health and medicine, when you actually look at all the available data you have to wonder how certain conclusions are being drawn.

For example, food is regularly contaminated, yet outbreaks are not as common. The conclusion: Just because the food is contaminated, doesn’t mean people will get sick.

Also, why is it that when an outbreak is investigated they find that most of the people who ate the contaminated food didn’t get sick? The conclusion: it’s not the germs, it’s the eater’s terrain. A truly detailed investigation should show that the people who got ill had underlying medical conditions, genetic mutations or nutritional deficiencies. But when someone gets sick, it never occurs to anyone to check the victim’s vitamin A and D status, etc.

Please let me know what you think about this.

Sterilize First. Ask Questions Later

Posted by Liz Reitzig on August 23, 2010

It won't be long before they come for your apples!

The food ‘safety’ bill or S510 is making its way through the Senate.  If this bill passes, it will dramatically escalate the current war against small, local farms.  The bill gives carte blanche to an FDA already zealously against small farms.  Andrew Ward from Campaign for Liberty reflects on consequences if the bill passes in his recent article.

“The recent outbreak of salmonella in several states around the country, and the resulting recall of nearly 400 billion eggs, has ignited calls by officials in the FDA for more regulatory authority over farms.  The AP reports that FDA chief Margaret Hamburg is calling on Congress to pass the dreaded S.510, the so-called Food Safety and Modernization Act, which would, among other things, place intrusive regulations on small family farms.  The FDA claims that without this new power more outbreaks are more than likely to occur, and that standardized guidelines for safe food need to be implemented immediately.”

Please follow this bill (go ahead and read it.  It’s got lots of juicy details) and don’t forget to call your Senators and ask them to oppose this legislation.  Remember: they work for you!  Call every day if you can…they need to hear from us!!!

Real milk on NPR

Posted by Liz Reitzig on July 28, 2010

On the Morning Edition July 19, 2010,  NPR covered the increasing popularity of fresh milk.

It was an honor to sit down with April Fulton and discuss with her all my reasons for choosing fresh milk.

I think she did a fantastic job piecing together all the information she collected to give a balanced explanation on why some consumers choose fresh milk.  I was thrilled to hear that a former FDA person actually admitted that pasteurization does destroy some nutrients.  At the end of the program, the narrator says “The food safety expert says not getting sick is what’s important.

He would never drink raw milk. But he thinks banning it only encourages Liz Reitzig and others to skirt the law, and that could put them at greater risk.

If you’re one of the one to 3 percent of the population that drinks raw milk, Acheson says make sure that the cows are clean, your hands are clean, and the bottle are sterilized and stored properly.”

This is the most flexibility I have ever heard from a government person on raw milk.  Kudos to NPR for covering this important topic and doing such a great job on it!
